Background
My son was diagnosed with celiac disease in the Spring of 2010, a few months before starting kindergarten.
Celiac disease is an autoimmune disease whereby the body cannot digest any amount of gluten, a protein found in wheat, barley and rye. In fact, if gluten is ingested, the body responds by attacking the small intestine and inhibiting the absorption of nutrients.
The only treatment is to adhere to a strict gluten-free diet.
Flash back to 2010, when gluten and celiac were not household names, and there were not nearly as many gluten-free products on the market as there are now.
My son was barely five years old, and his favorite food was pasta (yikes!), he was a little foodie wanting to try everything off our plates, and food traditions were an important part of our Italian family, especially around the holidays.
In fact, one of the first things my mother and I both thought of was… what are we going to do about Cookie Baking Day? It’s funny where the mind goes as your world is being turned upside down.
Anyway, Cookie Baking Day is a long time family tradition where we spend an entire day baking holiday cookies with family and friends. It is a fun, festive and yummy day!
And if we were going to continue with this tradition we needed a great gluten-free all purpose flour!
It was currently May 2010… and with a December deadline in our heads, we both set out trying gluten-free flours, determined to find a mix that worked well with all our favorite recipes!
