Lemon Poppy Seed Energy Bites

Gluten-Free and vegan, these Lemon Poppy Seed Energy Bites are packed with goodness, bursting with lemon and so delicious! And being No Bake, they come together in One Bowl in just 15 minutes and can be enjoyed immediately or later for an easy, nourishing snack. Rolling in coconut is optional, but recommended.

Ingredients
  • 2 cups gluten-free oat flour OR 2 cups gluten-free oats (to make your own oat flour below)
  • ⅓ cup + 1 tablespoon cashew butter
  • ¼ cup + 1 tablespoon Maple syrup
  • 1 tablespoon Lemon zest
  • 2 teaspoon Lemon juice
  • 2 teaspoons Lemon extract
  • 1½ teaspoons Vanilla extract
  • 1 tablespoon Poppy seeds
  • pinch of salt
  • Coconut for rolling, optional but recommended (we like Let's Do Organic, affiliate link)
Instructions
How to make gluten-free Oat Flour:
  1. Place 2 cups gluten-free oats (we like GF Harvest (affiliate link)) in a food processor and pulse for a minute or until fully ground into a flour-like texture.
  2. Add oat flour to bowl to make energy bites.
To make Energy Bites:
  1. Mix all the ingredients together in a large bowl using a stand mixer. You could also do my hand but mix well!
  2. Roll mixture into balls of any size (I usually go with 1¼ to 1½ inch diameter).
  3. Roll in coconut if using*
  4. Enjoy immediately or store in refrigerator (for 7-10 days) or freezer (up to 3 months). (I usually store some in fridge & keep the rest frozen until needed)
  5. *Pro Tip: To maintain perfect round bite, place on plate or small baking sheet in fridge and let set for an hour before storing in air tight container. This is especially helpful when not rolling in coconut.
