Gluten-Free Corn Fritters

These savory gluten-free corn fritter will satisfy your craving for something warm and bready. Crisp the outside and irresistible light, moist & airy inside. Just like fresh bread, but so much easier and quicker to make, they are melt-in-your mouth yummy! Recipe adapted from Cooking Light. . Recipe doubles well.

Serves: 5-6 fritters
  • ½ cup All Purpose Gluten- Free Flour with xanthum gum (we use GF Jules -- affiliate link)
  • 1 teaspoon baking powder
  • ⅓ cup fat free milk
  • 1 egg, beaten
  • 1½ cup fresh or frozen corn kernels, thawed or canned corn, drained and rinsed
  • ⅓ cup finely chopped green onions (or more to taste, lately we’ve using ½ cup and loving it!)
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • Olive oil for frying
  1. Note: Not sure exactly sure why but the order of operations matters here
  2. Combine flour and baking powder in a large bowl.
  3. Add egg and milk. Miix well until smooth.
  4. Stir in salt, pepper, corn and green onions
  5. Heat olive oil in a large non stick skillet.. Drop batter in spoonfuls onto hot oil to make 5-6 fritters.
  6. Cook approximately 3 minutes, flip and slightly flatten fritters with the back of the spatula. Cook another 5 minutes until golden on both sides. (you may need to re-flip and cook a minute or two to make the first side more golden)
