Monday Power Bowl!
A simple nourishing bowl with a super yummy dressing from The Crunchy Radish.
Recipe type: Salad, Dinner, Lunch
Cuisine: Gluten-free, Vegan
  • Kale or other greens.
  • Olive oil & pinch of salt to massage kale
  • Hummus - homemade or store-bought
  • ½ avocado
  • 1 box Steamed lentils (I use the vacuum packed ones from trader joes) (I made the entire box because so yummy and we'll eat the extra tomorrow)
  • 1 radish, sliced thin
  • 1 tbsp Hemp seeds for topping
  • Zucchini Chips (recipe coming soon!)
Cilantro Lime Cashew Dressing for lentils and/ or bowl (Makes more than you'll need for this bowl. I always make extra dressing and use for the next few days)
  • ¼ cup raws cashews, soaked for 1 hour
  • ½ cup olive oil
  • ¼ cup fresh lime juice
  • ¼ cup fresh cilantro leaves
  • ¼ cup sherry vinegar
  • ½ tsp cumin
  • 2 scallions, chopped
  • pinch of salt
  • 3 tbsp water
Cilantro Lime Cashew Dressing
  1. Add all ingredients in a blender and mix until fully combined
  1. Gently massage Kale with a touch of olive oil and pinch of salt until tender and vibrant green. Place in bowl.
  2. Mix lentils with 1 few spoonfuls of dressing.
  3. Top Kale with all remaining ingredients. Sprinkle with hemp seeds and add extra dressing if desired.
