Just 5 ingredients, gluten-free, vegan and no bake, these energy bites are packed with nutrients and so yummy! Perfect anytime of day you need a quick on-the-go energy boost or treat -- breakfast, snack or dessert!

Ingredients
THE BASICS
  • 1 16oz jar Almond Butter (we use Barney Butter amazon affiliate link)
  • 1¼ cup Gluten-Free old fashioned rolled oats (we like GF Harvest amazon affiliate link)
  • 1 cup shredded coconut + extra for rolling (we like Let's Do Organic amazon affiliate link)
  • ½ cup maple syrup
  • ¾ cup mini semi sweet chocolate chips (approximately ½ bag Enjoy Life Foods mini-chips amazon affiliate link)
POSSIBLE ADDS
  • ½ cup cranberries
  • ½ cup finely chopped walnuts
Instructions
  1. Mix all the ingredients together in a large bowl.
  2. Roll mixture into balls of any size (I usually go with 1¼ to 1½ inch diameter).
  3. Add extra oats if mixture too wet.
  4. Roll in coconut. (alternatively, roll in extra oats)
  5. Store in refrigerator or freezer.
  6. I usually store some in fridge at all times & keep the rest frozen until needed.
