Buddha Bowl with Broccoli Cauliflower Rice

  • avocado
  • black beans
  • orange pepper
  • parsley
  • red onion
  • cherry tomatoes
  • fresh corn
  • broccoli-cauliflower rice
  • olive oil
  • rice wine vinegar
  • salt and pepper
Instructions
Broccoli-cauliflower rice:
  1. Place whole broccoli & cauliflower in a food processor and pulse a few times until is is "riced".
(2 cups whole broccoli & cauliflower yields approximately 1 cup mixed "rice". I usually make a 50/50 mix, starting with 1 cup broccoli & 1 cup cauliflower but any ratio will work.)
Buddha Bowl
  1. Combine avocado, black beans, orange pepper, parsley, red onion, cherry tomatoes, fresh corn and broccoli-cauliflower rice.
  2. Dress with a splash of olive oil, rice wine vinegar, salt and pepper.
