Up your quesadilla game by adding our favorite super green --Swiss Chard! Super quick and easy, this quesadilla is simply swiss chard sautéed with lots of garlic, your favorite cheese and a gluten-free tortilla. Super quick and easy, and so yummy!

  • 4 gluten-free flour tortillas
  • 1 bunch swiss chard, cleaned, stemmed and chopped
  • 1-2 tablespoons olive oil
  • 3-5 cloves garlic, minced
  • salt and pepper to taste
  • ½ cup shredded cheese (we used mozzarella), divided

  • ½ avocado

  1. Heat olive oil in a large skillet over medium heat. Add garlic and sauce for about 30 - 60 seconds util until just fragrant.
  2. Add swiss chard and saute for 5 -7 minutes, until is wilts. Season with salt and pepper to taste. Will look like a lot at first but shrinks considerably when it cooks. Remove from pan and set aside.
  3. Remove pan from heat, wipe clean. Then heat again over medium heat.
  4. Spray pan with cooking spray.
  5. Lay one tortilla in the pan. Let cook 1 minute.
  6. Spread ½ the swiss chard on tortilla. Then sprinkle with ¼ cup cheese or more to taste.
  7. Top with second tortilla. Cook another 2-3 minutes.
  8. Flip and cook second side 2 minutes or until golden and cheese melted.
