Salad Pizza with Arugula & Lemon Vinaigrette

  • 1 Cali'flour Foods Cauliflower Pizza Crust
  • Approximately ¼ cup Tomato Sauce (Homemade or prepared)
  • Approximately ½ cup fresh cherry or grape tomatoes halved (add more or less to taste)
  • ½ 5oz carton fresh baby arugula (more or less to taste)
  • Fresh Ricotta
Lemon Vinaigrette (you will have enough for 2 pizzas, so save some a salad)
  • ¼ cup olive oil
  • 2 tablespoons fresh lemon juice
  • ¼ teaspoon salt (or to taste)
  • ¼ teaspoon pepper (or to taste)
  1. Preheat oven to 375 degrees.
  2. Bake Cali'Flour pizza crust for 7-10 minutes.
  3. While crust bakes, heat up tomato sauce in a small sauce pan and whisk together vinaigrette ingredients.
  4. Place arugula and tomatoes in a large bowl. Toss with vinaigrette to taste.
  5. Top heated pizza crust with warmed tomato sauce, leaving a ½ in edge. Top with arugula and tomatoes. Top with dollops of fresh ricotta.
  6. Serve and enjoy!
