This gluten-free Tortelloni Soup is the easiest and fastest ever! One pot, 20 minutes, then you have a nourishing, satisfying and delicious warming soup! Pro tip: While you can serve it as soon as 15-20 minutes, we like to let it sit in the pot a few minutes longer for the flavors to really combine. Recipe halves well.

Ingredients
  • 32 oz box vegetable or chicken broth
  • 28 oz chopped tomatoes (I used Pomi Chopped Tomatoes)
  • ½ teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon sea salt
  • 12 oz package gluten-free cheese Tortellini (we used DePuma's)
  • 3 cups fresh baby spinach
  • Parmagiana cheese for topping
Instructions
  1. In a large pot combine broth, tomatoes, basil, oregano and salt, and bring to a boil.
  2. Add tortellini and spinach, and cook to package instructions. (usually 5-7 minutes but we prefer to cook this closer to 10 minutes -- the tortelloni hold together well and the flavors combine more)
  3. Serve in bowls
  4. Sprinkle with Parmagiana and enjoy!
