The weather was beautiful here today! It was warm like summer but the air felt crisp like Fall with gusty winds blowing leaves everywhere. It literally felt like we were ushering in the change of the seasons.
Hence the inspiration for tonight’s dinner salad… that, and the fact that I needed to clean out the fridge a bit and the boys wanted burgers.
The details on the bowl: the last of the savory Black Bean and Mushroom Burgers, (seriously delicious and easy to make!), creamy avocado spread (avo, a touch of yogurt and lime juice), raw veggies (radish, cucumber and snap peas), and roasted delicata squash. So we have a little warm and cozy and little fresh and crisp, but all delish!
