This Almond Flour Carrot Cake is based on that cake in terms of having the same flavor profile and fabulous texture, but is obviously made with almond flour, plus it is made with less oil, less sugar, and the addition of Greek Yogurt.
So now we have something all types of dietary needs and preferences!

How to Make Almond Flour Carrot Cake
This is a super quick + easy recipe, requiring very little hands on time.
And the recipe is based on our reader favorite Best Carrot Cake Recipe in terms of the flavor profile and its amazingly moist and tender texture.
Before we get to the details, I want to remind you that there is a printable recipe with exact measurements and directions at bottom of the page.
You will need the following ingredients for the cake:
carrots (best to grate them fresh using a box grater rather than purchase pre-grated)
eggs
brown sugar (dark or light)
granulated sugar
olive oil or oil of choice (avocado oil or canola oil work great)
Greek yogurt
crushed pineapple (just a small amount)
vanilla extract
blanched finely ground almond flour (we like Bob’s Red Mill)
baking powder
baking soda
salt
cinnamon
and chopped walnuts, optional for topping (not in photo)
Step by Step How to Make Almond Flour Carrot Cake
The carrot cake batter comes together in 4 simple steps:
Mix oil, and both sugars thoroughly with a stand or hand mixer.
Add eggs one at a time, beat thoroughly after each addition.
Add vanilla, Greek yogurt, and drained pineapple.
Separately, combine almond flour, baking soda, baking powder, cinnamon and salt in a bowl with a whisk, pastry cutter or fork, then add dry ingredients alternately with the grated carrots to the wet ingredients
The batter will be smooth and easy to pour into your baking pan.
Pro tip: to make sure the cake comes out of the pan easily, grease the pan and line the pan with parchment paper, lightly greasing the parchment paper as well.
I cut two pieces of parchment paper so that they overlapped and covered all sides while I poured the cake batter in. Then I tucked in the parchment paper before baking.
It bakes for over an hour, because I found that long and at a low temperature was best for this cake.
Let cool in the pan for 30 minutes, then lift the cake out of the pan by lifting out the parchment paper, and let cool completely, leaving the parchment paper until fully cooled.
Cream Cheese Frosting
The cream cheese frosting is luscious, creamy and has the best flavor!
It is just 5 ingredients and whips together in 5 minutes.
All you do is mix with a stand mixer or hand mixer:
softened cream cheese
softened butter or dairy-free butter
vanilla extract
powdered sugar (aka confectioners sugar)
and a pinch or salt.
When the carrot cake has cooled completely, frost the top of the cake.
The cream cheese frosting is quite spreadable, and a nice thick layer, so you can spread it any way you like.
I opted for swirls, then topped with a few crushed walnuts which I think make it look pretty and which taste fabulous with the cake!

You just need to double the ingredients and bake it in two 8-inch cake pans.

1 3/4cupsblanched finely ground almond flourwe used Bob's Red Mill. Tip: spoon the almond flour into the measuring cup, then gently level, do not pack the almond flour into the measuring cup
1teaspoonsbaking soda
1/2teaspoonbaking powder
1/2teaspoonsalt
1 1/2teaspoonsground cinnamon
1/2cupOlive oil or oil of choice avocado oil or canola oil work great
1/2cupbrown sugar (light or dark), packed
1/4cupgranulated sugar
2largeeggs, room temperature
1teaspoonvanilla
1/3cupplain Greek yogurt
2tablespoonscrushed pineapple, drainedif you can't find crushed pineapple, use chopped pineapple, then use a knife to finely chop, and drain
1 1/2cupsgrated carrotsabout 3-4 large carrots, grated with a box grater
chopped walnuts for topping, optionalnot necessary but it makes the cake look pretty
Cream Cheese Frosting
4 ozcream cheese, or dairy-free alternative, room temperature
2tablespoonsbutter or dairy free butter, room temperature
Preheat oven to 325 degrees F, and grease a 8x8 inch metal pan, line with parchment paper so that the parchment comes over the edges slightly (you will fold down before baking),and lightly grease the parchment paper as well. Set aside.
Combine almond flour, baking soda, baking powder, salt, cinnamon in a bowl with a whisk, pastry cutter or fork, set aside. Do not skip this step, it not only combines the ingredients but makes the flour super fine which helps with the texture of the bread
Add oil, brown sugar and granulated sugar to a large mixing bowl, and using a stand mixer or hand mixer, mix until thoroughly combined. Mixture will be smooth, do not worry if it looks like some oil is sitting on top when the mixer stops.
Add eggs one at a time, mixing thoroughly after each addition.
Add vanilla, yogurt and crushed and drained pineapple. Mix thoroughly.
Add dry ingredients alternately with the grated carrots to the wet ingredients.
Pour the batter into the prepared square pan. Tuck the parchment paper in on all sides.
Bake at 325 degrees F for 55 minutes uncovered, then cover loosely with foil and continue baking 15 minutes.
Let cool for at least 30 minutes before lifting the cake out of the pan by grabbing onto the parchment paper, and let continue cooling on a baking rack. Leave parchment paper on for now.
Cream Cheese Frosting
Using a stand mixer or hand mixer, combine cream cheese and butter, then add in the remaining ingredients and mix until very well combined and creamy.
When the cake is fully cooled, carefully peel back the parchment paper as you transfer the cake to your serving plate. Spread frosting to the top of the cooled carrot cake loaf, and top with chopped walnuts as desired. Slice and enjoy!
Storing
Unfrosted Carrot Cake: The cake can be made a day ahead and stored overnight at room temperature, gently wrapped in wax paper. You might want to put a few toothpicks in the cake so that the wax paper doesn't stick to the top.Frosted Carrot Cake: Store covered in the refrigerator for up to a week.

Option to make layer cake:If you would like to use this recipe to make a layer cake, double the cake ingredients, and bake in two 8-inch round cake pans. Grease the pans, line the bottom of them with parchment paper and lightly grease the parchment paper.All other directions are the same as a single cake.Also double the frosting ingredients, and frost as desired.
