How to Make Arugula Salad with Lemon Vinaigrette

You will need the following ingredients:

arugula (also known as rocket or rucola)

extra virgin olive oil

fresh lemon juice

shaved Parmesan (skip if dairy-free)

salt and pepper

The only preparation is making the Lemon Vinaigrette.

The Lemon Vinaigrette is just 2 ingredients!

fresh lemon juice

extra virgin olive oil and

salt + pepper to taste

All you do is vigorously whisk the lemon juice and olive oil together until well combined and emulified — it will be thicker and creamier when combined, season with salt and pepper and toss with the arugula!

Top with freshly shaved parmesan and serve!

Make ahead tip: This salad is best served immediately. If preparing ahead, make the lemon vinaigrette but dress the arugula last minute.

Optional add in: Depending on the season, cherry tomatoes are great add to this salad, giving both a pop of color and an additional juicy flavor to switch it up.

Ingredients

Arugula Salad with Lemon Vinaigrette

  • 1 5oz container baby arugula
  • 3 tablespoons extra virgin olive oil* *this is the ratio of olive oil to lemon juice I use most often; feel free to try 2 tablespoons olive oil for an even more lemony taste
  • 2 tablespoons fresh lemon juice
  • salt to taste
  • pepper, to taste
  • ½ cup shaved Parmesan, optional but recommended if not dairy-free
  • ½ cup cherry tomatoes, halved, optional but add a nice pop of color

Instructions

Arugula Salad with Lemon Vinaigrette

  • If using cherry tomatoes, slice in half, place in a colander and sprinkle with salt and let sit. This will allow any excess water to drain.
  • Make the Lemon Vinaigrette: In a small bowl or liquid measuring cup whisk the olive oil and lemon juice until well combined and emulsified (it will be thicker and creamier). Season with salt and pepper to taste.
  • To a large bowl, add the arugula ,and cherry tomatoes if using, and toss with the dressing. Top with shaved parmesan. Enjoy!
  • Best dressed immediately before serving. Dressing can be made ahead and stored in a sealed container.
