We always included it as part of our dinner plan when we rent a house on the Jersey shore with family.

Update April 2020: 5 1/2 weeks in to “staying at home” and I finally found some great local stores, including one with an amazing fish market, that do online ordering & curbside pick up. So we had this baked fish and some baked fries for dinner last night, and it was such a nice change of pace!
By chance, my sister-in-law and a friend both made it for their family’s this weekend too and to rave reviews!
They each served it with their family’s favorite veggies and potatoes but everyone agreed the baked fish and the lemony herbed breadcrumb topping was amazing!
And this dish will become a regular in all our “stay at home” existence because it is so simple!

I am finally sharing my husband’s “famous” Baked Fish with Lemony Herbed Breadcrumbs! (it’s actually his mom’s recipe but he’s the one that makes it around here so we call it his recipe)
If you’ve followed me awhile on Instagram, you’ve probably seen this before on Instagram Stories.
My husband is quite “famous” in extended family for making this fish dish. He makes it when we vacation together “down the shore” (where are my NJ friends?) and he made it this year for Christmas Eve Feast of the Seven Fishes.
It is a dish that everyone loves, even people who swear they don’t like fish!
It’s based on a recipe his mom makes but being a true Italian of her generation, there is no recipe — it’s just a little of this and a handful of that… so my husband has graciously made this time and time again, measuring as he goes so that we can share it with you!
I’m certain it will be become a staple in your house too!

It’s a simple, quick, easy and delicious way to prepare and enjoy fish!
It’s just a white fish like flounder or sole, topped with a Lemon Herbed Breadcrumb mixture and baked for 15-20 minutes. That’s it!
And it’s super delicious and a fan favorite!
Here we made it while on vacation for 10 people and had to use the grill because we didn’t have oven space!
So let’s make it!
All you’ll need is:
fresh flounder or sole or your favorite light fish
gluten-free Italian breadcrumbs (we used Aleia’s – Amazon Affiliate link)
olive oil
1 garlic clove
salt
pepper
fresh lemon juice
and lots of fresh parsley!
As for the fish, we make this we a light, flaky white fish like a flounder or sole. It tends to be the most widely appealing fish as it’s not thick or fishy.
Pro tip: ask your fish market for what’s fresh, I am by no means a fish expert but have learned that if you ask your fish market, they will tell you what’s the best at the moment!
Start by making the breadcrumbs.
Using your hands mix all the ingredients together until really well combined.
My husband likes to mix the breadcrumbs, olive oil, lemon juice, salt, pepper, garlic and 1/2 the parsley first. Then mix in the garlic and additional parsley. There is no right way to do it.
You’re looking for a texture that is moist but not overly wet.
Then place the fish, smooth side down, in a well oiled pan.
Top with the Lemony Herbed Breadcrumb mix and bake for 17-20 minutes!
That’s it! The entire dish is ready in 30 minutes!
To complete the dinner, we generally serve it with some kind of potato (here we roasted them) and vegetable (usually corn on the cob in the Summer but here I made roasted tomatoes which were juicy and delish!).
The potatoes are a staple in our house.
Sometimes we cut them in cubes like this, other times we slice them thin like fries. Either way it is simple a whole potato, cut or sliced, tossed with olive oil, sprinkled with kosher salt and baked for 30 minutes.
Perfect every time!
For the tomatoes, here I simply sliced them in half, drizzled with olive oil and kosher salt and roasted for about 15 minutes until nice and juicy!
The entire plate takes 40-45 minutes in total if you can bake the fish at the same time as the potoates and tomatoes as we did and it is delish!

Ingredients
Baked Fish with Lemony Herbed Breadcrumbs
1 1/2cupsItalian bread crumbswe used Aleias - amazon affiliate link
4Idaho or Russet potatoesscrubbed and cut into 1-2 in pieces, skin left on
olive oil
kosher salt
Roasted Tomatoes
6-10 tomatoesdepending on size, halved
olive oil
salt
fresh parsley
Instructions
Baked Fish with Lemony Herbed Breadcrumbs
Preheat oven to 350 degrees F and generously oil baking pan/ pans (depending on the size of the fish and your pans you may need more than one pan.)
Mix the breadcrumbs: Using your hands mix all the ingredients together until really well combined. There is no right way to do this but we like to mix the breadcrumbs, olive oil, salt, pepper, garlic and 1/2 the parsley first. Then mix in the lemon juice and additional parsley. You want the breadcrumb topping to be moist but not overly wet. Feel free to add in a touch more olive oil as needed.
Breadcrumbs can be made 1-2 days ahead and left in the refrigerator in a sealed container.
Lay the fish smooth side down in a prepared pan (ie generously oiled with olive oil).
Top with the breadcrumb mixture.
Bake 15-20 minutes or until the breadcrumb mix is golden and the fish white, flaky and cooked through. The time varies based on the thickness of the fish.
Roasted Potatoes
Preheat oven to 400 degrees F and line a rimmed baking sheet with parchment paper.
Toss cut potatoes with olive oil (enough to coat) and lay in an single layer on the prepared baking sheet. Sprinkle with kosher salt.
Bake for 30 minutes or until crispy and golden.
Roasted Tomatoes
Preheat oven to 400 degrees F and line a rimmed baking sheet with parchment paper.
Place tomato halves on the baking sheet cut side up, drizzle each tomato with olive oil and sprinkle with salt.
Bake for 10-15 minutes or until bubbling and blistering.
I made this for Sunday dinner last night and it was quite a hit with the family. It is one of the best baked fish dishes we have ever had–we used flounder. It had so much flavor, and just the right amount of lemon and spices. The tomatoes were a great addition. We will be making this again soon.
KUDOS Peter (and Karen)! I made this fish for dinner for my family who are all foodies and discriminating critics. The whole family loved it! I also did the roasted potatoes and a side of baby bok choy. Next time, I might pair it with brown rice and will probably follow Karen’s lead and do the roasted tomatoes which I think would add nice color (since the fish already has the green from the parsley) and a flavor that would compliment the fish. It was also a super easy clean up job. I broiled both the potatoes and fish for 1 minute to get those breadcrumbs and potatoes nice and brown! LOVED IT! Can’t wait to try more recipes!!
