A 6 ingredient protein-packed smoothie recipe!

This Blueberry Mint Smoothie has been my go to smoothie the last 10 days — I have started my day with it every day, which if you follow my Instagram stories you have seen.

Naturally gluten-free and dairy-free, this creamy, delicious smoothie is light, has the best blueberry mint flavor,  and is packed with protein making it super satisfying!

Perfect for breakfast, snack or even dessert!

The above photos are essentially the same ingredients every time!

I say essentially because when I’m making smoothies for myself and my family (every day!), I don’t measure ingredients. I eyeball it and sometimes there is a little more or less of any given ingredient. And some days I add lots of extras like hemp seeds, flax seeds, psyllium husk or chia seeds. Other days I don’t.

To be honest, that flexibility and versatility is one of the things I love about smoothies!

The other thing I love about smoothies is that they are packed with so many nutrients — I get in some berries, protein, fiber, fat and lots of micro-nutrients which for me personally, feels like I’m starting my day on the right track.  And while some people prefer smoothies for lunch, these are perfect post-working out for me, prior to lunch.

So let’s make the Blueberry Mint Smoothie!

While I don’t measure for myself day to day, I do measure for you before providing a recipe.

Here’s what you’ll need:

frozen blueberries

fresh kiwi (or 1/2 banana)

almond milk (or milk of choice or combo milk + water)

almond butter

fresh mint leaves

vanilla collagen powder or protein powder of choice (I love Livwell Plant Protein Vanilla (not an affiliate link) in this smoothie. Also like Primal Kitchen Collagen Powder – amazon affiliate link — neither of these have a funky aftertaste)

ground flax seeds (optional)

chia  seeds (optional)

And all you do is you do is put all the ingredients (minus the chia seeds perhaps — see below) in your blender according to your blenders instructions and blend!

Depending on how your blender works, you’ll put frozen ingredients in first or last.

We use a Nutribullet blender (amazon affiliate link) which we just keep on our counter because it is so compact.

Regarding the chia seeds, I love them in a smoothie for the nutrients and texture but for whatever reason, I love to mix them in after blending the smoothie.  The texture is better to me – just personal preference.

So if you are new to chia seeds, start with a teaspoon mixed in and add more as desired or try blending with the other ingredients and see what you prefer.

No matter if or how you add the chia seeds, the smoothie will be creamy and so delicious!

Blueberry Mint Smoothie

Ingredients

  • 1 cup frozen blueberries I like to use frozen wild blueberries but any will do.
  • 1 fresh kiwi skin removed (you could sub 1/2 banana)
  • 1 cup almond milk (or milk or water of choice) I often use part almond milk/part water.
  • 1 tablespoon almond butter sub any nut/ seed butter you love but I particularly love almond butter in this smoothie
  • ½ cup fresh mint leaves (loosely not tightly packed)
  • 1 scoop vanilla protein powder or collagen powder I love Livwell Plant Protein Vanilla (not an affiliate link) in this smoothie. Also like Primal Kitchen Collagen Powder – amazon affiliate link
  • 1 tablespoon ground flax seeds (optional)
  • 1 tablespoon chia seeds (optional) If you're new to chia seeds, start with 1 teaspoon and add more as desired

Instructions

  • Place all ingredients** in a blender according to your blender's instructions and blend until smooth. **I like to stir in the chia seeds after blending-- feel free to try blending or not and see which you prefer**
  • Stir in chia seeds if not already blended with the other ingredients.
  • Enjoy!
