A quick + easy recipe for a yummy and nourishing gluten-free, no bake snack or dessert!

They taste like a blueberry muffin but are no bake,packed with nourishing ingredients and come together in one bowl, 15 minutes!
And the texture is amazing! They can be enjoyed immediately and eaten straight out of the fridge or freezer, your choice.

No Bake Snacks and Treats
Now don’t get me wrong… we love real Blueberry Muffins (and if you haven’t tried this recipe, it’s a must try — fan favorite!) but we also loooove No Bake Snacks and Treats!
For years now, we always have a stash of our favorite Almond Butter Chocolate Chip Energy Bites in the freezer (a snack everyone in my house eats multiple times a week!), you all loooove our Chocolate Peanut Butter No Bake Bars, and in the past few years, we’ve been loving adding new seasonal flavor energy bites into the mix as well!
They are packed with nourishing ingredients,tasty, satisfying and perfect anytime snacks!
freeze dried blueberries (we used Natierra Organic Blueberries found at Whole Foods Market)
cashew butter(we love natural cashew butter but substitute any nut or seed butter you love)
maple syrup
vanilla extract
cinnamon
sea salt
If you’ve never tried freeze dried blueberries before, they are so tasty!
They have a bit of a crunch (especially compared to dried cranberries or cherries which are chewy) and they crunch adds the best satisfying texture to these energy bites.
And they couldn’t be easier to make!
They come together in One Bowl and 15 minutes!
It’s just 3 simple steps:
Mix together gluten-free oats, flaxseeds, chia seeds and dried blueberries.
Add in the cashew butter, vanilla extract and maple syrup and mix to combine.
Form in to balls and enjoy!
The mix will hold its form well and be formed into balls immediately.
I usually roll into balls about 1 1/4 inch to 1 1/2 inch in diameter but you can make them smaller if you love bite size!
And I tend to store them in the refrigerator since they hold their form so well!
They stay in well in the refrigerator for 1-2 weeks, if they last that long! Or you are welcome to store them in the freezer.
No matter the size, they taste like blueberry muffins, are packed with nutrients and make the yummiest gluten-free healthy snack or dessert!
The blueberries hold their crunch even over time so it’s a super satisfying treat as well!

Ingredients
1cupgluten free rolled oats
½cupdried blueberries
1tablespoonground flaxseeds
1tablespoonchia seeds
¼teaspooncinnamon heaping
pinchsea salt
¾cupcashew butteror nut/ seed butter of choice
2tablespoonsmaple syrup
1½teaspoonvanilla extract
Instructions
In a large mixing bowl, using a large spoon, combine gluten-free oats, flaxseeds, chia seeds, cinnamon, sea salt and dried blueberries.
Add cashew butter, maple syrup and vanilla to the dry ingredients and mix, using a large spoon, until well combined.
Roll mix into approximately 1 1/2 inch balls,. You'll get 12-14 balls depending on size.
Store in refrigerator for 4-5 days or freezer for several months.
