Cauliflower & Citrus Salad with Orange Tahini Dressing

While I was under the weather last week, I still had an appetite.  That’s when I remembered this yummy salad adapted from SuperFood Magazine that I first made last summer.  I was craving all the Vitamin C and this salad packed with juicy oranges, grapefruit and pomegranate was just the answer.

Raw crunchy cauliflower, juicy orange slices, grapefruit slices, pomegranate seeds and walnuts on a bed of lettuce, topped with Orange Tahini Dressing and hemp seeds.  Perfect for a light lunch or side salad.

Recipe adapted from SuperFoods Magazine, it takes minutes to assemble, another 5 minutes to mix a dressing and it's so fresh and yummy! From the original recipe, I added in grapefruit (in addition to the orange slices) and hemp seeds for some extra nutrients.

  • 1 cup Raw Cauliflower, sliced thin
  • 1 5 oz box mixed greens
  • 1 large orange peeled and sliced
  • ½ grapefruit, peeled and sliced
  • 3 tbsp pomegranate seeds
  • 3 tbsp chopped walnuts
  • 2 tbsp hemp seeds
  • 4 tbsp tahini
  • 4 tbsp orange juice
  • 4 tbsp lemon juice
  • salt to taste
  1. Whisk all ingredients together, adjust to taste
  1. Assemble the salad starting with the mixed greens, then adding the cauliflower, orange & grapefruit slices, pomegranate seeds, walnuts and finally the hemp seeds. Drizzle with dressing.
