Chocolate Chip Chickpea Blondies
An easy gluten-free dessert recipe for fudgy, chocolaty chickpeas blondies!

They are a new favorite treat and we can not get enough!
They are fudgy (with a cake-like option), chocolaty and SO YUMMY!
BUT … they are made with a can of chickpeas (which I promise you will not taste at all — you can ask my taste testers!), so they are also secretly packed with nutrients!
And because the chickpeas act as the flour here, they are are naturally gluten-free and grain-free!
And the best part of these recipe is that there is an option to make them fudgy or more cakey with the addition of just one ingredient — chickpea flour!
Without the chickpea flour, you get a fudgy blondie, like the photo on the left, or with the chickpea flour you get a more cakey blondie, like the photo on the right.
BOTH are unreal! Great flavor (not chickpea flavor at all!) and amazing texture!

And it is a quick and easy recipe!
Before we get to the ingredients, I want to point out that there is a cooking video on this page so you can see how easy it is to make.

So let’s make the Gluten-Free Chocate Chip Chickpea Blondies!
You’ll need just 10 or 11 ingredients in total (depending on fudgy or cakier option):
1 15oz can cooked chickpeas
butter or dairy-free butter
almond butter (or nut/seed butter of choice)
eggs
sugar
vanilla extract
baking powder
baking soda
salt
chickpea flour (optional)
semi-sweet chocolate chips
Fudgy option – 10 ingredients
Cakier option 11 ingredients
The only difference is that the cake-like option uses chickpea flour.
I have used a variety of canned chickpea brands but the only chickpea flour I’ve used is Bob’s Red Mill. And I love it because it has a great texture and no smell or after taste.
The batter comes together in one bowl, in 6 easy steps and takes about 15 minutes:
In a large mixing bowl, mix the chickpeas for about 4–5 minutes until mashed, combined and almost a paste.
Mix in butter and almond butter or nut/ seed butter of choice.
Mix in eggs.
Mix in sugar and vanilla extract.
Mix in baking powder, baking soda, salt and chickpea flour if using.
Stir in chocolate chips, and that’s it!
Then all you do is spread into a baking pan, top with additional chocolate chips and bake!
After 30 minutes, your kitchen will smell amazing and you’ll have perfect chocolate chip blondies!
While you will be tempted to eat them right away, let them cool in the pan for 45 minutes so they can set.
If you want to rush the process as I have, after about 30 minutes, lift the parchment out and move to a wire baking rack to continue cooling.
Then slice into 16 squares and enjoy!
Slicing Pro Tip: when slicing blondies or brownies, they often crumble… to minimize crumbling, slice using a plastic knife — it will minimize any sticking and crumbling.

That’s a great question! I haven’t tried it and in general think that flax egg is great as a substitute with one egg… with more than one egg, it depends on the recipe. That said, because they are blondies, not a cake, and are still yummy if they don’t rise as much or are a bit fudgier, I would give it a try! Let me know if you make them.
