Cake-like but super chocolatey & fudgy when you bite into them!

I am obsessed with these Gluten-Free Chocolate Walnut Brownies!

Truth: I usually make brownies from a boxed mix. There are a lot of great gluten-free brownies mixes on the market. But never again!

These take only 5 extra minutes to prepare and are sooooo good!

Cake-like but super chocolatey and fudgy when you bite into them, and with big chunks of walnuts that pair so well with the rich chocolate flavor.

Bonus, I really love that I know what makes them so delicious!

All you need is 9 ingredients!  Butter (or dairy-free butter), Unsweetened Dark Chocolate 100% Cacao Chips (we used Pascha), eggs, sugar (remember the chips are unsweetened), gluten-free all purpose flour (we used GF Jules – affiliate link), vanilla extract, baking powder, salt and walnuts.

Back to the brownies, they come together quickly!

First you melt the butter and chocolate together. While it melts, combine the flour, baking powder and salt in a small bowl and beat the eggs until light and airy.

Add the melted chocolate mix to the beaten eggs, along with the vanilla.

Then add in the flour mix. And stir in the walnuts.

That’s it!

You can mix it by hand or we mix everything in our Kitchen Aid Stand Mixer. (Amazon Affiliate Link)

Pour it and spread evenly into an 8×8 baking pan and top with walnuts if you want. I like to keep some aside and put them on top.

Bake 30 minutes, just like a boxed brownie mix, and let cool. That’s it!

Fun Fact: this recipe is based on one my mom used to make alllll the time when I was young.  No one in the family had made them in years, for no particular reason and now they are a fan favorite again!

The only changes I made to to the original recipe was to use gluten-free flour and unsweetened dark chocolate chips instead of unsweetened chocolate squares because they were easier for me to find.

Ingredients

  • ½ cup butter or dairy-free butter.
  • 2 eggs
  • 1/3 cup Unsweetened Dark Chocolate 100% Cacao Chips we used Pascha Organic (OR the original recipe called for 2- one ounce squares unsweetened chocolate)
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • ¾ cup gluten free all purpose flour with xanthan gum we used GF Jules - affiliate link
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup walnuts coarsely chopped (you could also chop more finely)

Instructions

  • Preheat oven to 350 degrees F, and line a 8x8x2 pan with parchment paper, or grease and lightly flour.
  • Melt butter and chocolate together over very low heat stirring constantly. Cool slightly and set aside.
  • In a small bowl, combine flour, baking powder and salt with a whisk or pastry cutter, then set aside.
  • In a mixing bowl, beat eggs till light and airy.
  • Add sugar to the beaten eggs and mix to combine.
  • Add in chocolate mixture and vanilla, mix to combine.
  • Add flour mixture, mixing well.
  • Stir in nuts, leaving some aside for topping if desired.
  • Pour into prepared baking pan and spread evenly. Bake for 30 - 35 minutes or until a toothpick comes out clean.
  • Let cool. Cut in 16 squares and enjoy!
