to these Collard Green Spring Rolls with Sunbutter Dipping Sauce that I made last week for a lunch with friends. Packed with nutrients, fresh, light and loaded with flavor, they disappeared quickly!
Each wrap is packed with fresh basil (which adds a surprise punch of flavor with every bite), carrots, red pepper, bean sprouts, tofu, and red cabbage — and the spicy-sweet dipping sauce is out of this world! Made with sunflower seed butter, gluten-free tamari, maple syrup, lime juice, and red pepper flakes, it’s practically drinkable it’s so tasty!
This was my first time making spring rolls of any kind. It is actually quite easy but it was a bit of a learning process. Some were absolutely perfect. Others are being held together by that big bowl of dipping sauce in the center, haha. Perfect or imperfect, they were DELISH!
