I grilled the tofu for about 5 minutes on each side using an indoor grill pan.

I made the Collard Green Spring Rolls from Minimalist Baker a month or so ago and absolutely loved them. I loved the flavor combo and the dipping sauce, and was craving it again tonight but didn’t have the time to roll them so I placed all the ingredients in a big bowl and called it dinner!
Red cabbage, bean sprouts, carrots, grilled tofu (the rolls call for raw tofu but I grilled it tonight), basil, red pepper, collard greens — and the yummiest spicy-sweet dipping sauce! In fact, truth be told I might have made this bowl again just for the dipping sauce! Made with sunflower seed butter, gluten-free tamari, maple syrup, lime juice, and red pepper flakes, it’s practically drinkable it’s so tasty!
