These Easy Gluten-Free Soft Pretzels are a new family favorite!

Golden on the outside, a perfect soft, fluffy and chewy texture, salty and so yummy, we can’t get enough of them… especially when they’re warm and straight from the oven.

Best part? They are just 5 ingredients, take 10 minutes to prep and bake in 22 minutes!

And that’s a really good thing right now… because with remote school 3 days a week, we’re looking for all the snacks!

And they are since they’re so simple to make, they are super kid friendly, not only to eat but to bake!

So let’s talk the recipe….

The recipe is adapted from the garlic knot recipe, which was adapted from Skinny Taste.

We love the garlic knot dough so much, we immediately started thinking of things we could make with it! And these gluten-free Soft Pretzels were the first thing that came to mind!

Just like garlic knots, my son hasn’t had many, in any, great gluten-free soft pretzels… until now.

We’ve been making these on repeat and I finally snuck a batch away to take a photo!

How to make Easy Gluten-Free Soft Pretzels

The dough is just 4 ingredients:

gluten-free all purpose flour (we used GFJules, affiliate link)

baking powder

kosher salt 

plain Greek yogurt! (Yep the Greek yogurt works like magic!)

Back to the gluten-free soft pretzels…

They make only 5 pretzels and while the recipe doubles well, instead, we keep making them fresh because it is one of the easiest recipes ever!

The dough comes together in literally a few minutes…

You mix the flour, baking powder and salt.

Then add in yogurt and mix the flour.

I mixed it well in my Kitchen Aid Stand Mixer, finding that the gluten-free dough benefited from the mixing and doesn’t require much kneading.

And when it’s done mixing (2-3 minutes), pulls away from the sides.

Next you knead the dough about 5-10 times. The dough isn’t sticky but I still find it best to put a bit of flour on my hands before kneading.

You might be tempted to skip the kneading step because they dough seems so pliable already, but it makes a difference and takes just a minute.

After kneading the dough, divide into 5 equal parts.

One at a time, roll a part into a ball, then using both hands roll the ball into a worm like strip about 11-12 inches long (I found it easiest to roll on a silcone mat).

Then form the dough into a pretzel braid by forming creating a loop with one side, then looping the other side over the top… there is no one way to make it look like a pretzel so don’t worry if yours doesn’t look perfect.

The dough is a dream to work with, holding together beautifully, pliable and stretchy… sometimes, if I don’t like the way one looks, I just re-roll it and re-shape it, it’s that pliable!

Next, generously brush tops, being sure to get all sides of the braid with melted butter or olive oil.

And sprinkle with coarse salt to taste.

When you sprinkle with salt before baking the salt really bakes into the top, giving you that salty, yummy pretzel taste!

If you want to add more salt after they bake, when they first come out of the oven, use your brush to lightly brush a little olive oil or butter while it’s still hot and sprinkle with more salt so that it sticks to the pretzel.

22 minutes later... Golden on the outside, soft and chewy on inside!

Just look at this when I break one apart.. soft, fluffy and amazing looking!

As for dipping.. believe it or not, most of my family eats them plain! But my husband loves to dip them in mustard and I keep thinking it would be fun to dip in a cheese sauce!

Easy Gluten-Free Soft Pretzels

Ingredients

Easy Soft Pretzels

  • 1 cup all purpose gluten-free flour with xanthan gum we used GFJules, affiliate link
  • 3/4 teaspoon kosher salt + extra for sprinkling
  • 2 teaspoons baking powder
  • 1 cup fat free Greek Yogurt we used Fage brand
  • melted butter or olive oil for brushing

Instructions

Easy Soft Pretzels

  • Preheat oven to 375°F and line a rimmed baking sheet with parchment paper.
  • In a large bowl add flour, baking powder and salt and mix or whisk well. Add the yogurt and using a stand mixer or hand mixer, mix for 2-3 minutes or until well combined. The dough will form into a ball and pull away from the mixer when well combined.
  • Place dough on a silicone rolling mat and using your dry hands coated with the tiniest bit of flour, roll into a ball and knead about 10 times.
  • Divide the dough into 5 equal pieces, then roll each piece into a ball and then using both hands roll each ball into worm like strips, about 11-12 inches long. Pro tip: I find it easiest to roll into the worm like shape by placing the ball on a silicone mat and rolling with both hands.
  • Then form a pretzel shape by forming a loop with one side, then looping the other side over the top of the first loop, and gently pressing the loops into the edge of the pretzel base. Then place on the prepared baking sheet.
  • Use a brush to generously brush melted butter or olive oil on the top and sides of the pretzel, including the inside of the braid. Sprinkle with coarse salt to taste.
  • Bake on the middle rack of the oven until golden about 22 minutes.
  • If you want to add more salt after baking, while still hot, brush the tiniest bit of olive oil or butter on the baked pretzel and then sprinkle with additional salt.. this will make sure the extra salt sticks to the pretzel.

    1. Great question that I’ve been asked a lot! I haven’t made them with a dairy free yogurt but if you use a thick/ Greek yogurt like Kite Hill Greek yogurt, it should work! I will try to pick some up and try myself as well! Let me know if you make them.

  6. Hi! I always boil my regular soft pretzels in a baking soda bath before baking to give them that chewy pretzel texture. Do you think that would work with these?

      We used the dough to make pretzel bites and gave them a baking soda bath and they were perfect! Got that shiny brown soft pretzel look.

  7. Bobs red mill 1 to 1 does not work in this recipe. It is too sticky even when you add more flour. I was looking forward to these but I don’t have the right flour nor the right know how to fix.

    1. Has anyone tried to do these with cinnamon sugar on the top? If so, did they come out good? Ratio? My daughter wants an Annie’s pretzel so im looking forward to trying these! TIA

  8. The dough was extremely sticky and no matter how much flour I added I couldn’t get it to come together. I was bummed since it seems so easy, but I guess the type of flour really matters. I used Trader Joe’s cup for cup gluten free flour, which includes xanthum gum.

    1. I’m sorry you had that experience! I have made this dough countless times and haven’t had that issue. I can try to problem solve but not being in your kitchen it’s a little trick! Do you mind me asking what type of yogurt you used? And did you use a mixer and let it mix together?

    So good and easy! My toddler loved helping to make them. I just mixed/kneaded by hand (not with my stand up kitchen aid) and it worked great! I did have to add a little extra flour along the way. This was also my first time using GF Jules flour and it’s incredible. Thank you!

  11. My son is gluten, dairy and sugar free thanks to Lyme Disease! Do you have an alternate for the Greek Yogurt? I donot forsee Coconut Yogurt work the same!

    They came out amazing! Don’t be scared of how the texture of the dough is. Keep rolling it into a thin tube like then braid. It taste like a reg pretzel! I’m amazed! I used the GF All purpose flour from Walmart which contains the xatham gum in it.

  13. Great for flatbread and pizza crust. Add some oregano or time. Use rolling pin to flatten to 1/4” or less. Bake until bottom is crispy, flip and add toppings.

    I wish I could post a photo. I’ve made these twice and they are amazing! Today I made them in an unconventional shape (think, twist donut shape) with1/2 red and 1/2 green food dye, so that they are Christmas themed. So fun and delicious!

    Ever since being diagnosed with Celiac Disease I have missed warm soft pretzels, these brought me back to the ones I remember and loved. Recommend brushing again with butter when they’re done and you’ve got Auntie Anne’s or Pretzel Maker!
