Or have you seen it in store and wondering how to prepare asparagus?

Asparagus is the ultimate Spring vegetable and by now you might know, that everyone in my house/ extended family loves it!

While you can find it in stores periodically throughout the year, it is everywhere come early Springtime!

When we see the vibrant green bunches of asparagus in March, we know that longer days and warmer weather is coming soon!

And I purchase asparagus almost every time I head to the store!

Pro tip: Asparagus naturally varies in thickness.  My family prefers the thinner ones because they get nice and crispy (and cook faster) but try both and see what you love!

We love it in pasta, in quiche, in soup … but the way we love it the most, and the way we make it most often, is the simplest… we roast it!

Roasting asparagus is quick and easy!

Takes just 25-40 minutes depending on the size of your asparagus and is crispy edges, melt in your mouth tender and so delicious!

And what makes it extra delicious is that it’s roasted with Parmesan cheese and olive oil which give the best flavor!

And this simple method of roasting asparagus is an Easter favorite in our house!  In fact, it’s the only recipe that makes it to our Easter Menu year after year!

As an aside, we have many food traditions for Thanksgiving and Christmas, but Easter has always been a menu that changes from year to year depending on the time of year and it’s been fun to have that flexibility!

This year we are celebrating Easter just with the 4 of us and are still finalizing our menu but roasted asparagus will be there! Plus we’re probably making Italian Stuffed Artichoke Hearts, Dinner Rolls, our Spring Quinoa Salad among other dishes.

Back to Easy Roasted Parmesan Asparagus…

Let’s make it!

All you need is 3 ingredients:

Asparagus

Extra Virgin Olive Oil

Parmesan cheese

And comes together quickly!

First rinse and dry the asparagus.

Cut off the ends (I usually cut off about an inch or a little more )

Place the trimmed asparagus on a baking sheet or in a baking pan.

Drizzle them with olive oil, making sure they are well coated but not dripping in olive oil.

And generally sprinkle with Parmesan cheese.

Pro tip: Before placing in the oven to roast, make sure the asparagus have aren’t touching if possible. That will make sure they get extra crispy!

And that’s it!

Roast them until they are crisp on the edges and the asparagus looks tender.

Easy Roasted Parmesan Asparagus

A simple, quick and delicious way to enjoy asparagus! Perfect every day or for a holiday! The quantities below can be adjusted to taste and number of people serving

Ingredients

  • 1 bunch asparagus
  • 2 tablespoons extra virgin olive oil enough to coat but not have asparagus dripping in oil
  • 2 tablespoons Parmesan cheese or more to taste

Instructions

  • Preheat oven to 400 degrees F and line a baking sheet with parchment paper, or very lightly oil a shallow baking pan. Set aside.
  • Prepare your asparagus by rinsing, patting dry and trimming off the ends (I usually trim off about 1 inch)
  • Place asparagus on prepared sheet or pan. Drizzle with oil and use your hands to make sure asparagus are coated but not dripping in oil.
  • Sprinkle with parmesan cheese.
  • Bake for 25- 40 minutes, or until crispy on tips and edges and asparagus tender. Time will vary based on how thin or thick the asparagus are. Thinner ones will be done in about 25 minutes, thicker ones, 40 minutes.
