Zucchini is one of my favorite veggies (technically a fruit?) so I am constantly cooking and baking with it, and each year we add more zucchini recipes to our repertoire.

Original post… Zucchini is one of the most versatile vegetables and in honor of National Zucchini Day, we compiled all our favorite ways to enjoy it here in this post.
All these recipes are gluten-free, vegetarian or vegan and cover everything from zucchini bread and muffins to zoodles and pasta to fries and chips!
Let’s start with baked goods.
We love baking with veggies because especially with gluten-free baking, it helps add moisture and yields the best texture for quick breads and muffins.

Zoodles (or zucchini noodles) are the obvious, easy dinner and of course, pasta!

With this recipe I tend to enjoy the zoodles not cooked but other times I love to saute them quickly with some olive oil, garlic and lemon juice and serve them with other roasted veggies and tahini sauce…. so good!

Another favorite is pasta!
Pasta with Zucchini and Tomatoes: A simple pasta dish that showcases the some of the best of Summer produce. With minimal ingredients, it’s bursting with flavor and literally tastes like Summer!
When in doubt, grill or roast them!
Grilled or Roasted Zucchini are so versatile… you can enjoy them on salads, on pizzas, sandwiches, savory oats, on toast or even as a simple side dish!
