It is one of those vegetables (technically it is a fruit) that we enjoy all year round but it is particularly perfect and abundant in the summer. And it is the most versatile vegetable (fruit!) making it perfect simply roasted, or as we share here in so many savory and sweet recipes that use zucchini.
This article was first created several years ago in honor of National Zucchini Day and we have been adding to it each year.
