These are inspired by our Almond Butter Chocolate Chip Energy Bites. If you’ve followed me a while, you know we restock these constantly as they are my family’s go to snack.
A few weeks ago, one of my kids asked if we could bake one and these Flourless Chocolate Chip Cookie Bites were born!
We started with the energy bite as a base, reduced the sweetness and added in some chia seeds, hemp seeds and flax seeds for extra nutrients and texture and we have been making them on repeat ever since!
So let’s make them!
They are a super easy gluten-free cookie recipe!
All you need is 8 ingredients you probably already have in your pantry:
Almond butter (we love Barney Butter – Amazon Affiliate link, used to be a brand ambassador) OR any nut/ seed butter of choice
mini chips (we use Enjoy Life Foods mini chips Amazon affiliate link)
shredded coconut (we like Let’s Do Organic – Amazon affiiliate link)
chia seeds
hemp seeds
ground flaxseeds
And this flourless, gluten-free chocolate chip cookie recipe comes together quickly!
The batter comes together in 1 bowl, 10 minutes, then bake for 10 minutes… that’s it!
Not necessary, but I like to mix the dry ingredients first so that they are well combined.
Then add in the almond butter and maple syrup, and mix with a spoon until well combined. The batter will be thick but will roll easily into balls.
Roll the batter into balls and bake!
We usually get 15-20 cookie bites depending on how big we make them.
Pro tip: They won’t spread when they bake so you can fit a many as you like on the baking tray. And they will be the same size baked as unbaked.
Pro tip: we tried flattening them before baking but they get to crumbly. So we highly recommend baking them as balls and enjoying them as cookie bites .
After baking 10 minutes, they will be golden on the bottom and edges. You do not want to over-bake.
Let cool 5-10 minutes even though you will be tempted to bite right into them because your kitchen will smell so good!
You want to let them sit because they will continue to set. If you can resist the urge to eat some, go for it! Just know that they will continue to set and hold together really well as they cool.
And they are the yummiest, flourless, gluten-free chocolate chip cookie!

116oz jaralmond butter OR any nut/ seed butter of choicewe used Barney Butter (affiliate link)
¼cupmaple syrup
⅔cupmini semi-sweet chocolate chipswe used Enjoy Life Chips (affiliate link)
Instructions
Preheat oven to 350 degrees F and line a baking tray with parchment paper, set aside.
In a large bowl, mix all the dry ingredients -- coconut, oats, chia seeds, hemp seeds, flax seeds and chocolate chips.
Add almond butter and maple syrup and using a large spoon, mix until well combined.
Roll into approximately 2 inch balls (larger or smaller to taste), place on prepared baking sheet and bake 10 minutes. They will be just golden on the edges and bottom.
Let cool for about 10 minutes and enjoy!*

* they will continue to set as they cool.* when complete cooled, store in a sealed container for a week or freezer for 3 months.
