Garlic Lovers Broccoli and Chickpea Salad
Just 4 main ingredients + lots of garlic and herbs, highly munchable and crowd pleasing!
This simple, naturally gluten-free “Garlic Lovers Broccoli and Chickpea Salad” combines some of our favorite ingredients into a one big salad, bursting with flavor!
It’s made with real, whole food ingredients and only 4 main ones: Tender-crisp broccoli, salty and savory sun-dried tomatoes, tangy feta, lotssss of garlic, chickpeas which absorb all the flavors + lots of Italian herbs….
It’s simple but hearty, packed with nutrients , addictively delicious and highly munchable!
Here’s all you need: Broccoli, Chickpeas, Sun-dried Tomatoes and Feta + olive oil, garlic, crushed red pepper, red wine vinegar, salt, pepper, oregano, fresh thyme and fresh basil.
The flavors by themselves are amazing but the key is in preparing the broccoli.
The broccoli is “steamed” in hot garlic oil until it’s “al dente” — so it’s tender-crisp with the perfect amount of crunch!
You simply heat up olive oil, simmer for lots of garlic for a minute or two, stir in some crushed red pepper and pour over the raw broccoli, reserving some to add later.
You then let the broccoli sit for about an hour and the hot oil steams the broccoli to the perfect amount crunch! And the broccoli is bursting with flavor!
Then simply stir in the chickpeas, sun dried tomatoes, oregano, thyme and feta along with the remaining oil.
Super simple, hearty and packed with nutrients, the salad is savory, tangy, crunchy and so yummy!
Can be prepped ahead and stays for days so perfect for meal prep.
Would also be great as a salad for brunch, picnic, bbq or party of any kind because in addition to being a total crowd-pleaser, it is hearty and won’t wilt.

Easy to prepare, the broccoli is perfectly "cooked" but crunchy broccoli and so flavorful! Note: "Cook time" is the broccoli resting for an hour after being tossed with the hot garlic oil. Ingredients
1 1/2teaspoonsred wine vinegar
1/2teaspoonkosher saltor to taste
4cupsbroccoli floretspreferably cut into bite size florets
3/4cupextra virgin olive oil
4fat garlic clovesminced
Large pinch crushed red pepper flakesor more to taste
1/2cupsun dried tomatoes packed in oilchopped into bite size pieces
1 15ozcan chickpeasdrained and well rinsed
1/2 - 1teaspoonoreganoadd more to taste
1/2teaspoonpepper or more to taste
1teaspoonFresh thyme or more to taste
1/2 -1cupfetacrumbled
1/2cupfresh basiltorn
salt to taste
Instructions
In a large bowl, stir together the vinegar and the salt
Add broccoli and toss to combine
In a large small saucepan, heat olive oil until hot but not smoking. Add garlic and cook until fragrant, lowering heat as needed. Should take about 1 minute -- remove from heat when garlic starts to brown
Stir pepper flakes
Pour 1/2 to 3/4 of the hot oil over broccoli and toss well, reserving the remaining oil for later.
Cover the bowl with the broccoli and let sit for 1 hour at room temperature.
After broccoli has sat an hour, add the chickpeas, sun dried tomatoes, oregano, pepper, remaining garlic oil, and thyme. Toss well to combine.
Add feta and fresh basil, Toss to combine. Taste and add more of any herb or ingredient to taste. Serve and enjoy!
Stores well in the refrigerator in a sealed container for several days.

Love this dish. The garlic oil gave the broccoli a delicious taste. The garbanzo beans and feta go well together. Made a batch and had it for lunch two days in a row. Love your recipes
This salad was very quick and easy to make and my children loved it too. We ate it more as a main dish with some rice. Had Tomato and lentil soup as a starter. I made a note on the recipe to double the amount next time as we all loved it so much ( 5 persons )

This was awesome….we diced a lb or 2 of shrimp and tossed it in at the end. Great for a healthy meal.
