How to Make Gluten-Free Blueberry Lemon Poppy Seed Muffins

This is a quick + easy gluten-free muffin recipe! No resting of the batter required.

The recipe is based on a combination of our Gluten-Free Lemon Poppy Seed Bread and our Best Blueberry Mufins. I tried to take the best of both so that these muffins are super simple to make and have the great flavor and texture.

Here are the ingredients you will need:

butter or dairy-free butter

sugar

lemon juice

lemon zest

lemon extract

vanilla extract

eggs

Greek yogurt or dairy-free yogurt (we used Fage 0% milkfat)

gluten-free all purpose flour (we use GF Jules)

baking powder

baking soda

salt

poppy seeds, and of course

blueberries!

Step by Step How to Make Gluten-Free Blueberry Lemon Poppy Seed Muffins

These easy gluten-free muffins are ready to bake in 5 simple steps!

  1. First mix the butter and sugar very well until “creamed” or very well combined and light & fluffy, about 1- 2 minutes.
  2. While that is mixing, combine the flour, baking powder, baking soda, salt and poppy seeds in a small bowl with a whisk or pastry cutter. You might be tempted to skip this but with gluten-free baking especially, it not only combines the ingredients but makes the flour finer which helps give the bread its great texture.
  3. Mix in the eggs with the butter-sugar mixture. Then vanilla extract, lemon extract, lemon juice and lemon zest. At this point, the bread smells amazing already!
  4. Then alternately mix in the flour mix and Greek yogurt, until both are fully mixed in and well combined.
  5. Stir in the blueberries using a spatula or just one or two spins with the mixer so they don’t break.

The batter has a fabulous texture!

Spoon it evenly into muffin tins, top with extra blueberries as desired and bake!

Let cool in the baking pan for 15-20 minutes — this is always important as the pan is still hot and the muffins still setting.

Lemon Glaze

While the muffins are delicious as is, and some in my family devour them before we add the lemon glaze, the sweet + tangy lemon glaze puts them over the top!

The lemon glaze is just 2 ingredients — confectioners (aka powdered) sugar and fresh lemon juice.

Whisk them together vigorously and drizzle over the cooled muffins.

And in less than an hour, you can be enjoying the freshest and tastiest Lemon Blueberry Poppy Seed Muffins!

Ingredients

Gluten-Free Blueberry Lemon Poppy Seed Muffins

  • ½ cup salted butter or dairy-free butter, softened to room temperature
  • 1 cup cane sugar
  • 2 large eggs, room temperature ideally
  • 1 teaspoon vanilla extract
  • 2 teaspoons lemon extract
  • 3 tablespoons lemon juice
  • 1 tablespoon lemon zest, packed
  • 2 cups gluten-free all purpose flour with xanthan gum we use GFJules
  • teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 tablespoon poppy seeds* *can use up to 1 1/2 tablespoons though my family prefers just 1
  • 1 cup Greek Yogurt or dairy free Greek Yogurt we used Fage 0% milkfat
  • 1 cup blueberries + extra for topping as desired
  • turbinado sugar, optional but a nice finishing touch if not using lemon glaze

Lemon Glaze (optional)

  • 1 cup powdered (confectioner's) sugar
  • 2 tablespoons fresh lemon juice

Instructions

Gluten-Free Blueberry Lemon Poppy Seed Muffins

  • Preheat oven to 350 degrees F and line muffins tins with muffin liners.
  • In a large mixing bowl, add butter and sugar and beat until creamed (well combined and fluffy), about 1-2 minutes.
  • While the butter and sugar mix, combine flour, baking powder, baking soda, salt and poppy seeds in a small bowl using a whisk or pastry cutter. Set aside.
  • To the butter/sugar mixture, add eggs, one at a time, mixing well.
  • Add vanilla extract, lemon extract, lemon zest and lemon juice, and mix to combine.
  • Alternately mix in flour mix and yogurt, stopping to scrape down the sides and making sure it is well combined. (start with 1/2 of the flour mix, then 1/2 the yogurt, then remaining flour and 2nd half yogurt).
  • The batter will be smooth and spoon into your prepared muffin tins. Top with additional blueberries as desired.
  • Bake 30 minutes in total or until toothpick comes out of the center clean, uncovered for 20 minutes, then loosely covered with foil for the remaining 10 minutes.
  • Let cool in muffins tins for 15 -20 minutes, then remove to baking rack and cool

Lemon Glaze

  • In a small bowl or liquid measuring cup, whisk the confectioners sugar and lemon juice together vigorously until well combined, then drizzle over the cooled muffins.
  • Let glaze set and enjoy!
  • Store in a sealed container at room temperature for 2 days, in the refrigerator up to 5 days, or in the freezer up to 3 months.
