They are a gluten-free puff pastry appetizer everyone will rave about!

It is a gluten-free puff pastry filled with brie, either cranberry sauce or fig jam and a sprinkling of pecans (optional but adds great crunch), then baked to golden, melty perfection… and they are so delicious!

The brie is warm and melty, and whether you top it with tart cranberry sauce or slightly sweeter fig jam, each bite paired with golden, buttery gluten-free puff pastry is divine!

Top with a sprig of fresh rosemary for a festive pop of color and they are a show stopper!

How to Make Gluten-Free Brie Bites

There are lots of recipes for similar bites, I adapted this one from Well Plated by Erin.

Here are the ingredients you’ll need:

gluten-free puff pastry (We used Schar Puff Pastry. This recipe is the first time we’ve used Schar Puff Pastry and we loved it! Easy to work with and bakes up to golden puff pastry with great flavor, and it holds together well once baked).

brie cheese

cranberry sauce* (we used our Famous Cranberry Sauce)

*or  fig jam

finely chopped pecans

fresh rosemary (optional but adds a nice festive pop of color)

Step by Step How to Make Gluten-Free Brie Bites

They take about 15 minutes to prepare and come together in just a few simple steps.

The first thing to do is make the gluten-free puff pastry cups:

  • Thaw the gluten-free puff pastry according to the package. Roll flat and slice into 16 squares (approximately 2 1/2 inches each)
  • Press each square into a well oiled mini muffin tin. This will create your gluten-free puff pastry cup. They won’t all look the same and that’s perfectly fine!

Slice the brie into 1/2 -3/4 inch pieces.  Tips: refrigerate until ready to slice so that it slices easier and use a sharp knife or cheese slicer.

Place each piece of brie into the gluten-free pasty cup.

Top with either cranberry sauce or fig jam. The cranberry sauce looks festive with the pop of red and has nice tart contrast with the nutty buttery brie. The fig jam is slightly sweeter, but fig jam and brie is one of my favorite combinations so you can’t go wrong with either.  You could also try a raspberry jam if you want the red color and a slightly tarter jam.

Top with a sprinkle of chopped pecans if you’re not nut-free. They add a nice crunchy contrast to the melty brie and puff pastry.

And bake!

They bake until the gluten-free puff pastry is golden and the brie is melty. If any of the brie or jam comes out of the puff pastry, just spoon it back in, no one will notice.

Remove from the oven and let sit just 3-5 minutes, then using a fork transfer from the muffin tins to a serving plate and top a few with a spring of rosemary.

They can be served warm or room temperature.

And whether you opt for the cranberry sauce or fig jam, they are both so delicious with the contrasts of flavors and textures.

Storing and Making Ahead

To make ahead you could either:

  1. Bake them and then reheat in the oven or microwave.
  2. Or prepare them up to baking, cover loosely with wax paper and refrigerate, then bring room temperature and bake when ready to serve.

I prefer the second option when first serving them to friends and family. But leftovers reheat well!

Equipment

  • 1 24 cup mini muffin pan

Ingredients

  • 1 1/2 sheets gluten-free puff pastry dough we used Schar gluten-free puff pastry dough (1 box)
  • 8 oz brie cheese
  • 1/2 cup cranberry sauce ** we used our Famous Cranberry Sauce
  • 1/2 cup ** OR fig jam (or a combination of the two)
  • 1/4 cup finely chopped pecans (skip is nut-free)
  • kosher salt
  • rosemary sprigs, cut into small pieces for serving optional

Instructions

  • Preheat oven to 375 degrees F and generously coat muffin tins with spray oil.
  • Puff Pastry: follow the instructions on your puff pastry brand for thawing and unroll one pastry sheet at a time, and gently roll flat (the Schar pastry was quite easy to work with). Cut into 4 even lengthwise strips, then 4 even crosswise strips so that you have 16, approximately 2 1/2 inch, squares.
    Press each square into the prepared muffin tin. This will create your puff pastry cup. Repeat with the second pastry sheet but you will only use half of it and need 8 more squares/pastry cups to fill the entire 24 cup mini muffin tin.
  • Brie: Refrigerate the brie until ready to cut so that it slices easily. Using a sharp knife or cheese cutting knife, slice brie into 24 1/2 - 3/4 inch pieces. Place one piece of brie in each pastry cup.
  • Top with cranberry sauce or fig jam: Top with approximately 1/2 teaspoon cranberry sauce or fig jam. They are both great tasting, so we like to do a combination. Sprinkle with a pinch of kosher salt, then with a few chopped pecans (approximately 1/4 teaspoon), and bake for 15-18 minutes, or until pasty is golden and brie is melted.
  • Remove from oven and let rest for a 3 minutes. If any of the brie, cranberry sauce or jam have bubbled out, just spoon it back in (no one will know!). Using a fork, carefully lift the bites out of the baking tins and onto a serving plate. Top a few of them with rosemary sprigs to look festive and enjoy warm or room temperature.
  • Store in the refrigerator in a sealed container and reheat in the microwave or oven.
  • To make ahead, either bake fully and reheat in the oven. Or to be freshest, prepare up to the point of baking, cover gently with wax paper and refrigerate, then bring to room temperature and bake when ready to serve. Enjoy!
