Crisp romaine, a savory creamy dressing, and crunchy croutons. Only this time, we’re making homemade gluten-free croutons, and they couldn’t be easier or yummier!
And it’s such a versatile salad!
It’s a perfect accompaniment to simple mains like soup or pasta, a great side salad if you want to impress your guests, and a fabulous main dish salad if you add your protein of choice – grilled chicken or shrimp or a simple roasted salmon.
How to Make Gluten-Free Caesar Salad
A Caesar salad is one of the simplest salads to make, even gluten-free!
All you need is:
*A great Caesar dressing. We have a Vegan Caesar Dressing that we adore and here we are sharing a more classic Caesar dressing.
*Gluten-free croutons — which take 5 minutes to prep and 10 minutes to bake!
*Fresh, crisp Romain lettuce. You want to use hearty romaine lettuce rather than a spring mix or some lighter green because the crispness stands up to the creamy dressing and crunchy croutons.
For this more classic Caesar Dressing, you’ll need the following ingredients:
anchovy (it adds that classic flavor and it gets mixed up so you’ll never know!)
mayonnaise (I use this instead of more traditional olive oil and raw eggs)
Worcestershire sauce (make sure it is gluten-free — the original Worcestershire sauce contained barley malt but now there are many brands that are gluten-free. We used Lea & Perrins which is certified gluten-free)
Parmesan cheese (an imported Parmesan Reggiano gives the best flavor)
And all you do is mix all the ingredients together in a small blender until they are well combined and creamy.
If you don’t have a small blender, you could whisk the ingredients together but if you whisk them, mince the garlic and mash the anchovy with a fork or spoon first. The whisked dressing will be slightly thicker.
Either way, these dressing is so creamy and flavorful — it’s savory with the garlic, anchovy and parmesan cheese, tangy with the lemon juice, a little salty and so delicious!
How to Make Gluten–Free Croutons
Making gluten-free croutons is quick + easy!
The key is starting with a great baguette and not over baking them.
Other brands we like are are Schar and Against the Grain.
All you need aside from a great gluten-free baguette is olive oil and kosher salt.
And gluten-free croutons are quick to make!
Cut the bread into 3/4 inch pieces and toss with olive oil and salt.
Then bake for just 10 minutes!
They will get crisp and golden but still be tender in the center. You don’t want to over bake them as gluten-free bread hardens a lot when it cools.
Assembling the Gluten-Free Caesar Salad
You want to use a Romaine Lettuce — whether you use a full head of Romaine or the Romaine Hearts as I did here. Avoid light salads like a spring mix which will be limp when tossed with the creamy Caesar dressing.
Romaine is a crisp, fresh lettuce that holds up well to the flavorful, creamy Caesar dressing and crunchy croutons making the salad so satisfying!
Chop the romaine into bite size pieces and when ready to serve, toss with dressing, top with croutons and sprinkle with fresh Parmesan cheese.
Pro tip: while you can prep all the ingredients ahead of time, assemble and dress the salad immediately before serving to keep the lettuce the crispest.

2cupscubed gluten-free baguette, cut in approximately 3/4 inch cubeswe used 1/2 a gluten-free baguette
1/8teaspoonkosher salt or to taste
Caesar Dressing (yields approximately 2/3 cup)
1teaspoon Dijon mustard
1/2teaspoongluten-free Worcestershire saucewe used Lea & Perrins which is certified gluten-free
1/3cupgrated Parmesan cheesean imported Parmesan Reggiano gives the best flavor
pepper to taste
12oz romaine lettuce -- equivalent one large head or 2 hearts of romaine, more or less as desired, chopped into bite size pieces
freshly grated Parmesan cheese for topping
Preheat oven to 350 degrees F and line a baking sheet with parchment paper if using.
In a large bowl toss cubed bread, drizzle with olive oil and sprinkle with salt and toss to coat. Spread on prepared baking sheet so that the bread cubes are not touching.
Bake 10 minutes or until just golden on edges and still very slightly soft in center -- you don't want them too crispy as they will get too hard as they cool.Best served day of, but stay fresh if stored in a sealed container at room temperature for up to 2 days.
Add all the ingredients to a small blender and blend until creamy. Store in the refrigerator for up to 5 days in a sealed container.If you don't have small blender you could whisk the ingredients together but be sure to mince the garlic and mash the anchovy with a fork prior to whisking. The dressing will be a little thicker but still so delicious!
When ready to serve, in a large bowl, add chopped salad and toss with dressing to taste. Top with croutons, sprinkle with Parmesan cheese and enjoy!
