What type of fish to use for this recipe

For this recipe, you will want a tender white fish like a tilapia, sole or flounder. The best way to choose is to see what your fish store or fish counter has that is fresh and affordable. We have used tilapia most frequently for this recipe.

And you want the fish to be thin but not paper thin or it will break when you flip it. Don’t worry if a piece breaks off when you flip it, it just means your fish is tender.

How to Make Gluten-Free Fish Piccata

Gluten-Free Fish Piccata is super quick and super flavorful!

The fish fillets are lightly coated in gluten-free all purpose flour, pan sauteed in olive oil, and finished with a simple lemon white wine sauce.

The entire process takes just 20-25 minutes depending on how quickly you prepare the fish.

You will need the following ingredients:

fish fillets (we used tilapia, but flounder or sole work great too!)

salt and pepper

gluten-free all purpose flour (we used GF Jules)

olive oil (not pictured below)

dry white wine (we use a pinot grigio)

fresh lemon juice

Step by Step How to Make Gluten-Free Fish Piccata

The fish piccata comes together in 4 simple steps:

1. Salt and pepper your fish. (We do this one at a time immediately before dredging in flour)

2. Dredge the fish in flour. Dredge means to simply coat the fish in flour. We like to put flour on wax paper and then one fillet at a time, salt and pepper the fish fillet, then place it in the flour and with your hands pressed the flour into the fish. Don’t be shy, you want the fish to be fully coated.

3. Saute the fish fillets for about 3 minutes per side, in olive oil until just golden and slightly crispy. The fish will not be fully cooked and ready to eat, but it will be cooked a few extra minutes with the lemon and wine.  Remove from the pan and wipe the pan clean of excess oil.

4. Add the white wine and lemon juice to the pan, and on low heat add the fish back into the pan and let the fish cook an additional 3-5 minutes, flipping once. The lemon juice and wine will reduced into a simple sauce.

The fish will be lightly coated with the lemon wine sauce and so flavorful.

If you want extra sauce, you can double the amount of lemon juice and wine.

What to Serve with Gluten-Free Fish Piccata

To complete this easy gluten-free fish dinner, we love to serve it alongside roasted vegetables and potatoes.

Roasting is a great option for several reasons: first roasted vegetables always taste great, and second, roasting vegetables is easy and mostly hands off.

Simply cut the vegetables and potatoes into similarly sized pieces, toss with olive oil or oil of choice, season with kosher salt and bake at 400 degrees for 30 minutes. Make sure the vegetables are not touching so that they get crisp. This simple method will yield crisp and flavorful roasted vegetables everytime.

Today we served the fish with roasted asparagus (because it was the first time we saw it in store in a while!), potatoes and broccoli (which are always a hit here).

They all cooked in the oven at the same time, while the fish was being prepared.  (If you are planning your meal, plan on 10 minutes to prepare the vegetables and 30 minutes to roast)

You can serve with any vegetables or sides you love.

This is our plate and it was packed with nutrients and so flavorful!

Equipment

  • large, deep saute pan

Ingredients

Gluten-Free Fish Piccata

  • 1 pound tender white fish of choice like tilapia, sole or flounder. we used tilapia
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 3/4 cup gluten-free all purpose flour we used GF Jules
  • 1/4 cup fresh lemon juice (about 1 1/2 -2 lemons) double quantity for more sauce
  • 1/3 cup dry white wine (we use pinot grigio) double quantity for more sauce
  • approx 1/2 cup olive oil (you want to cover base of pan like 1/8 thick)

Suggested Sides (serve with your favorite roasted vegetables)

  • 1 bunch asparagus
  • 2 heads broccoli, cut into bite size florets
  • 2 large potatoes, scrubbed clean, cut into cubes
  • olive oil
  • kosher salt

Instructions

Gluten-Free Fish PIccata

  • Prepare the fish:
Rinse fish in water and pat dry, leaving on paper towels.
Salt & pepper fish, then dredge fish in flour: combine salt and pepper in a small bowl and spread flour on wax paper; one by one, salt and pepper each fish fillet, place each piece of salted and peppered fish fillet in the flour and with your hands, press the flour into the fish. Don’t be shy, you want the fish to be fully coated. Set aside.
  • Saute the fish: Heat olive oil in large, deep saute pan on medium high heat until shimmering but not burning. Gently place fish in heated oil and cook each side 3 minutes, carefully flipping with a slotted spatula so oil drips off. The fish will be just golden and slightly crispy on the outside, but will not be completely cooked because it is going back in pan with wine and lemon juice (just don't eat at this point).
Remove sauteed fish from pan and place on plate lined with paper towels. Set aside.
  • Finish with lemon wine sauce: Wipe the pan clean of excess oil -- leaving some drippings is fine. With heat on low- medium, add lemon juice and wine, then place fish back in pan. You want heat to be high enough for low simmer. Cook fish 2-3 minutes each side. The lemon juice and wine will reduce to a thick sauce on the fish. If you want extra sauce, double the amount of lemon and wine.
  • Transfer fish to serving plate and add any extra liquid from pan on top of fish. Enjoy!

Suggested Sides

  • Pair this simple fish with roasted vegetables of choice.
  • Preheat oven to 400 degrees F and line baking sheets with parchment paper if using.
  • For each vegetable, toss cleaned and cut vegetables with olive oil, spread evenly on a baking sheet so that they are not touching, sprinkle with salt and bake for 30 minutes, or until just crispy, golden and tender.
