Mashed potatoes are seriously one of the best side dishes, but what to do with leftovers?

This quick + easy gluten-free recipe transforms leftover mashed potatoes into fritters that are crispy on the outside, fabulously creamy (and a little cheesy) on the inside!

In fact, once you try them, you may want to make some extra mashed potatoes for the sole purpose of making more crispy gluten-free fritters!

How to make Gluten-Free Mashed Potato Fritters

These Gluten-Free Mashed Potato Fritters are super quick and easy to make!

Here are the ingredients you’ll need:

Leftover gluten-free mashed potatoes

cheddar cheese or cheese of choice

green onions

egg

gluten-free all purpose flour (we use GF Jules)

salt + pepper to taste (if your mashed potatoes are well seasoned you don’t need much)

olive oil for frying

Pro tip for celiac friends: mashed potatoes are usually gluten-free, but every once in a while a chef or a package will use flour as a thickener, so just check the ingredients if you did not make them yourself.

Step by Step How to Make Gluten-Free Mashed Potato Fritters

The batter comes together in essentially one simple step:

Mix all the ingredients together in a bowl until well combined.

Then, using ice cream scooper or approximately 1/4 cup:

  1. spoon out some batter and form into a ball
  2. gently flatten into a disk with your hands,
  3. and dredge or gently coat with flour.

You will get 8 mashed potato fritters.

Pan saute the fritters in olive oil about 4-5 minutes each side, or until golden and crispy.

That’s it!

When we take them off the pan, we let them cool for a minute or two on a baking rack, with paper towels underneath to absorb any excess oil, so that they stay extra crispy.

And just take a look!

They are crispy on the outside but so creamy and tender on the inside!

Serve as is or top with a dollop of sour cream or Greek yogurt, or garnish with extra scallions. However you serve them, they are delicious!

Storing: Extras stay will the refrigerator for several days.  Reheat in a microwave or skillet.

Ingredients

  • 2 cups leftover gluten-free mashed potatoes try our Creamy Mashed Potatoes
  • 1/3 cup green onions (aka scallions), white part and green parts
  • 1/3 cup cheddar cheese or cheese of choice
  • 1 large egg, whisked
  • 1/3 cup gluten-free all purpose flour + 3-4 tablespoons for dredging we use GF Jules
  • salt to taste * *if your mashed potatoes are well seasoned, you won't need much
  • pepper to taste * *if your mashed potatoes are well seasoned, you won't need much
  • olive oil for frying
  • sour cream for serving (optional)

Instructions

  • Add all ingredients to a large bowl and with a large spoon, mix to combine until well combined, and the the egg and flour are absorbed.
  • Using a cookie scoop, or 1/4 cup scoop, spoon out batter into 8 parts. Roll each spoonful into a ball, then using your hands, gently flatten into a disk.
  • On a medium plate, add 3-4 tablespoons flour, and dredge or lightly coat the entire fritter in flour. Set aside on a plate.
  • In a large non-stick skillet, over medium heat, add 1-2 tablespoons of olive oil (enough to cover the bottom of the pan) and heat until shimmering (not burning). Add the fritters (in batches as needed) and cook 4-5 minutes each side or until golden and crispy. The fritters are basically sauteed, not deep fried, so add more oil as needed when you flip them.
  • Remove from pan and place on baking rack with paper towel underneath to stay crisp.
  • Serve as is, with a dollop of sour cream or Greek yogurt, and/ or top with extra scallions.
  • Any extras stay well in the refrigerator in a sealed container. Reheat in the microwave or skillet.
