How to Make Gluten-Free Soft Pretzel Bites

This recipe is based on our Easy Soft Pretzels but with the addition of a baking soda bath which gives the bites a more golden look and that quintessential pretzel flavor.

The dough is just 4 ingredients:

gluten-free all purpose flour (we used GFJules all purpose flour)

baking powder

kosher salt 

plain Greek yogurt! (Yep the Greek yogurt works like magic!)

Back to the Gluten-Free Soft Pretzel Bites…

They dough comes together in 2 Easy Steps.

  1. Mix the flour, baking powder and salt.
  2. Add in yogurt and mix the flour. I mixed it well in my Kitchen Aid Stand Mixer, finding that the gluten-free dough benefited from the mixing and doesn’t require much kneading. And when it’s done mixing (2-3 minutes), pulls away from the sides.

Place on a pastry mat and knead the dough about 5-10 times. The dough isn’t sticky but I still find it best to put a bit of flour on my hands before kneading.

You might be tempted to skip the kneading step because they dough seems so pliable already, but it makes a difference and takes just a minute.

After kneading the dough, divide into 4 equal parts.

The dough is a dream to work with! One at a time, roll each part into a ball, then using both hands roll the ball into a worm like strip about 8-10 inches long.

Using a pizza cutter or sharp knife, cut the dough into approximately 1 inch pieces. Don’t worry if they are not perfectly even.

The Baking Soda Bath

Whether you’re opting for the salted or cinnamon sugar topping the next step is a baking soda bath. I used to be intimated by this until I realized it literally took just a few seconds and was 1000% worth it to get the over the top golden pretzel color and taste.

All you do it dip the pretzel bite dough into a mix of boiling water and baking soda for about 10 seconds!

This quick step makes a huge difference and helps give the pretzels their quintessential golden color and flavor.

You can even see how they look visually different in the photo below before being baked.

Pro Tip: Since you don’t want them to stay in the boiling water more than 10 seconds or so, I found it easiest to do in batches of 4-6 using a large slotted spoon so that I could scoop them out quickly.

Salted or Cinnamon Sugar Topping

At this point, if you are topping them with salt, top with coarse salt before baking.

If you’re opting for cinnamon sugar, bake them and add the cinnamon sugar after.

For fun, you can see on the photo below right, that I accidentally skipped the baking soda bath on one of the pretzel bites and it is visually not as golden.

How to Make Cinnamon Sugar Topping

The cinnamon sugar topping is simple and fun to do!

Simply mix the cinnamon and sugar together in a bowl, and add melted butter to another bowl.

Then either brush butter on the baked bites or I find it easy to just do a quick dip into the butter and let any excess drop off. Then roll the pretzel bites in the cinnamon sugar so that all sides are coated.

Serving and Storing

Whether you are serving the pretzel bites salted or with cinnamon sugar, they are best served immediately or within a few hours.

If you’re not serving them day of,  you can store the salted pretzels in a sealed container for a day, then reheat in a microwave or oven. The cinnamon sugar pretzels are best enjoyed day of.

The salted pretzels freeze and thaw well and can be reheated in the microwave or oven.

For cinnamon sugar bites, freeze the pretzel bites without the cinnamon sugar and add the cinnamon sugar after thawing and when ready to serve.

Ingredients

Easy Gluten-Free Soft Pretzel Bites

  • cups all purpose gluten-free flour with xanthan gum we used GFJules
  • ¾ teaspoon kosher salt + extra for sprinkling in salted option
  • 2 teaspoons baking powder
  • 1 cup plain fat free Greek yogurt or dairy-free Greek yogurt we used Fage brand

Baking Soda Bath

  • ¼ cup baking soda (4 tablespoons)
  • cups water

Cinnamon Sugar Option

  • ¾ cup granulated sugar
  • teaspoons ground cinnamon
  • 4 tablespoons melted butter or dairy-free butter

Instructions

  • Preheat oven to 400 degrees F and line a baking sheet with parchment paper. Set aside.
  • Make the dough: In a large bowl add flour, baking powder and salt and mix or whisk to combine. Add the yogurt and using a stand mixer or hand mixer, mix for 2-3 minutes or until well combined. The dough will form into a ball and pull away from the mixer when well combined.
  • Roll and cut into pretzel bites: Place dough on a silicone pastry mat and using your dry hands coated with the tiniest bit of flour, roll into a ball and knead about 10 times.
    Divide dough into 4 pieces. Then roll each piece into a ball and then using both hands roll each ball into worm like strips, about 8-10 inches long. Pro tip: I find it easiest to roll into the worm like shape by placing the ball on a silicone mat and rolling with both hands. Using a pizza cutter or sharp knife, cut into 1 inch pieces. Place on prepared baking sheet.
  • Baking Soda Bath: Bring water and baking soda to a boil in a medium saucepan. 4-6 bites at a time, add bites to the boiling water for 10 seconds, set a timer. (They float to the top at the end of the 10 seconds too.) Using a slotted spoon, scoop them out, let any excess water drip off and place back on prepared baking sheet. Repeat baking soda bath with remaining bites.
  • If salting them, add coarse salt now while bites are still wet. If opting for cinnamon sugar, skip to next step.
  • Bake on the middle rack of the oven for 15 minutes. They will be golden brown. Remove from oven, let sit 5 minutes and enjoy salted bites, or add cinnamon sugar.

Cinnamon Sugar Option

  • In a medium bowl, combine sugar and cinnamon. In a separate bowl, melt butter.
  • Dip or brush baked pretzel bites in butter, letting any excess drip off. Then toss in cinnamon sugar until well coated.
  • Best enjoyed immediately.

Serving and Storing

  • Pretzel Bites are best enjoyed day of.
  • Salted Bites can be stored in an air tight container overnight and heated the next day in microwave or oven.
  • Salted bites can be frozen for 2 months. Thaw and reheat in a microwave or oven. For cinnamon sugar bites, freeze before adding the cinnamon sugar and add the cinnamon sugar topping after thawing.
