This is a quick n' easy gluten-free, vegetarian soup you are going to want in your repertoire! The soup is ready to serve in about 15-20 minutes and is such a delicious, nourishing and warming meal!
It’s soup season all year round in our house, but especially in the colder months!
Soup is an simple and nourishing meal that my family loves!
Depending on the soup, it’s often served with a sandwich, salad, biscuits (plain or savory) or garlic knots.
But this 20 Minutes Gluten-Free Tortellini Soup is a meal unto itself, and it is the easiest and fastest soup ever!
It’s beyond quick n’ easy (no chopping required!) and so nourishing, satisfying and delicious!

So let’s make it!
All you need is one pot, 20 minutes and 8 ingredients!
You’ll need is:
Your favorite gluten-free chicken or vegetable broth (we like Progresso here)
A box or can of chopped tomatoes (we like Pomi Chopped Tomatoes)
Fresh Baby Spinach
Oregano
Basil
Sea Salt and
Gluten-Free Tortellini (we love DePuma’s Cheese Tortelloni)
You probably noticed we used DePuma’s gluten-free tortellini. DePuma’s is a local Connecticut company that can be found nationwide but it’s in several of our local stores to easy for us to find, plus we have met the owner and love supporting them!
There are other gluten-free tortellini brands which I haven’t tried. They include Taste Republic and Schar (which I’m not sure is available in the United States).

So back to making the gluten-free tortelloni soup…
Literally, lunch or dinner is served in the amount of time it takes to bring broth to a boil and cook the tortellini.
All you do is add the broth, tomatoes and spices to a big pot and bring to a boil.
Add in the tortelloni and baby spinach and cook until the tortelloni is ready to serve!
The cook time will depend on your brand, most are 5-7 minutes. But where we like most pasta cooked al dente, we tend to cook the tortelloni over the cooking time, more like 10 minutes or so because they hold together well and become melt in your mouth yummy!
And we highly recommend serving it with some parmesan cheese.
Sometimes we’ll even sprinkle some into the soup while it’s still simmering.
The parmesan adds the best flavor!
With or without the parmesan, this is a simple, hearty soup that has been on repeat here!
The recipe can be cut in half easily and is perfect for stay at home lunches or quick and easy dinners!

Ingredients
32ozbox vegetable or chicken broth
28ozchopped tomatoesI used Pomi Chopped Tomatoes

Instructions
In a large pot combine broth, tomatoes, basil, oregano and salt, and bring to a boil.
Add tortellini and spinach, and cook to package instructions. (usually 5-7 minutes but we prefer to cook this closer to 10 minutes -- the tortelloni hold together well and the flavors combine more)
