How to Make Gluten-Free Yellow Cupcakes with Strawberry Frosting

Let’s start with the cupcakes.

The cupcakes are just 9 ingredients, ones you probably already have in our pantry.

You’ll need:

gluten-free all purpose flour (we use GF Jules)

baking soda

salt

butter or dairy-free butter

cane sugar

eggs

vanilla extract

plain Greek yogurt or dairy-free yogurt

and whole milk or dairy-free milk of choice

Step by Step How to Make Gluten-Free Yellow Cupcakes

The cupcake batter comes together in 5 simple steps and about 10 minutes:

All you do is:

  1. Cream the butter.
  2. Mix in the sugar.
  3. Then add in the eggs, one at a time.
  4. Add in the vanilla and yogurt.
  5. Then alternately add in the dry ingredients and milk. Super simple!

Then  batter will be smooth and creamy, so spoon or pour into muffin tins with cupcake liners and bake!

Make ahead option: The cupcakes only bake for 20 minutes so while they can be baked and frosted on the same day, they also are great made a day ahead. Just keep out at room temperature on a baking rack, loosely covered with wax paper.

Step by Step How to Make Strawberry Buttercream Frosting

If you have never made your own frosting, you are in for a real treat!

Homemade frosting is made with minimal ingredients, comes together quickly and is unbelievably luscious!

And this frosting has the best flavor and is not overly sweet.

For this Strawberry  Buttercream Frosting, you will need the following ingredients:

butter or dairy-free butter

powdered sugar, also known as confectioner’s sugar

vanilla extract

strawberry puree **

milk of choice **

For the strawberry puree, I puree about 1/2 cup of strawberries, then strain the puree through a small mesh strainer to get rid of any seeds. — the entire process takes about 5 minutes and it worth it for the fabulous strawberry flavor and pretty pink color!

And you could skip the milk and use all strawberry puree if you want a richer pink color.  I was going for a more pastel pink here.

Either way, look at how luscious the frosting is!

Frosting Cupcakes

The cupcakes should be cooled completely before frosting.

I used a piping bag (which I never do!) because I was trying to be fancy and get a really bold amount of frosting on these, but you could certainly frost them with a butter knife like I usually do!

In fact, if you look closely at the middle cupcake, second row from top, I dropped this cupcake upside on the table while frosting it, completely destroying the pretty piped frosting (it happens sometimes!), so I used a butter knife to frost it and in my opinion, it still looks great!

Top with sprinkles for any and every occasion — Spring, Easter, baby showers, wedding showers, birthdays, holidays or events, and they look extra fun and festive!

Tip: Sprinkles are also great for hiding any frosting disparities or imperfections.

Ingredients

Yellow Cupcakes

  • 1 1/2 cups gluten-free all purpose flour with xanthan gum we used GF Jules
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2/3 cup butter or dairy-free butter, room temperature I used 1 stick salted and the remainder unsalted but either will work
  • 1 1/4 cups granulated sugar
  • 2 large eggs, room temperature
  • 1 tablespoon vanilla extract
  • 1/3 cup plain Greek yogurt or dairy-free yogurt
  • 3/4 cup whole milk or dairy-free milk

Strawberry Buttercream Frosting

  • 6 tablespoons butter or dairy-free butter, room temperature
  • 3 1/4 cups powdered sugar (aka confectioners sugar)
  • 1 teaspoon Vanilla extract
  • 2 tablespoons strawberry puree Make by pureeing 1/2 cup strawberries in a small processor, then straining the blend with a small mesh strainer
  • 1 tablespoon milk of choice* *for a richer pink color use extra strawberry puree in place of milk

Instructions

Yellow Cupcakes

  • Preheat oven to 350 degrees F and line 12 muffin tins with cupcake liners.
  • In a small bowl, combine flour, baking soda and salt using a pastry cutter, whisk or fork. Set aside.
  • In a large mixing bowl (I used a Kitchen Aid Stand Mixer), beat softened butter until smooth and creamy.
  • Add sugar and beat on high until well combined, scraping down the sides as needed.
  • Add the eggs, one at a time, beating each one until mixed in.
  • Add in vanilla and Greek yogurt. Mix until well combined, scraping down the sides with a spatula as needed.
  • With the mixer running on low speed, alternately add the dry ingredients and milk until all combined.
  • Pour evenly into prepared muffin tins, and bake at 350 degrees F for 20 minutes.
  • Let cool in pan for 15 minutes, then transfer to a baking rack to continue cooling before frosting. Can be made a day ahead, leave out at room temperature, loosely covered with wax paper.

Strawberry Buttercream Frosting

  • In a mixing bowl, beat butter. Add powdered sugar alternately with strawberry puree/ milk and mix until smooth, creamy and a spreading consistency. Blend in vanilla.
  • Spread evenly on cooled cupcakes using a piping bag or butter knife. Top with sprinkles or other toppings as desired and enjoy!
