I wanted something a little different from our Best Banana Bread (it’s sooooo good, if you haven’t tried it yet!) and it’s not quite zucchini season but there’s lots of fresh zucchini in stores…. so I created a bread that combined the two!
The end result is amazing!
It has the same fabulously moist, soft & fluffy texture of our banana bread but it’s packed with grated zucchini and it uses way less sugar than zucchini bread (if that matters to you!)!
And no one will guess it’s gluten-free!
Oh, and I added tonsss of chocolate chips on this one!
The chocolate chips are optional, my family loves the bread without the chips but I always love extra chips on top!
Either way it’s delicious!
And best part? It is super easy to make!

Back to the Gluten-Free Zucchini Banana Bread…
The batter is easy to make and comes together in about 10 minutes.
The first thing to do is shred the zucchini.
The recipe requires 1 1/2 cups which is about one medium to large zucchini, or 2 small zuchini. And I like to shred it with a simple box grater and let it sit in a colander and drain any excess water while I gather the rest of the ingredients and start mixing it all together.
Note: I leave the skin on, but you could peel if it you have some in your house who don’t want to see any green….
Once your ingredients are gathered, it comes together in no time!
First mix together the wet ingredients — mashed banana, melted butter, egg, vanilla and sugar.
As an aside, you may notice that there is not a lot of added sugar in the recipe as the sweetness comes from the banana.
While those ingredients mix well, combine the dry ingredients.
It’s always a great idea to combine the dry ingredients first so that they are not only well combined but because it makes the flour finer and improves the final texture.
Then add the dry ingredients to the wet and mix until well combined.
Add in the zucchini and that’s it!
You could add in chocolate chips or even walnuts at the same time.
Then spoon into a baking pan, spread evenly, top with chocolate chips if using and bake!
That’s it!
Pro Tip: While you can just grease and flour the pan as I did above, if you plan on topping the bread with chips, I highly recommend lining the pan with parchment paper instead as it will be easier to get the bread out of the pan without losing any chips!
Be sure to let the bread rest in the baking pan for 10-15 minutes before removing from the pan. The pan will be very hot still and the bread continues to bake and set even after the oven!
Then removed and let sit until cool. Slice into it and enjoy!

And look at all that zucchini! (pro tip- if you have some in the family that don’t want to see the zucchini, you could peel it before grating it)

Ingredients
2cupsall purpose gluten-free flourwe used GF Jules(affiliate link)
1teaspoonbaking soda
1/4teaspoonbaking powder
1/2teaspoonsalt
1teaspoonvanilla
1cupmashed bananaabout 2 bananas
1/2cupcane sugar
5tablespoonsbutter or dairy-free buttermelted
1egglightly beaten
1 1/2cupgrated zucchiniloosely packed (pro tip: grate first and let sit in a colander to drain water while you prepare the other ingredients)
1/4 - 1/2cupchocolate chipsoptional (according to tastes and depending on if you put chips in the bread or just on top)
Instructions
If you haven't grated the zucchini, do that first, then place in a strainer so it can drain water
Zucchini Banana Bread
Preheat oven to 325 degrees F and line with parchment paper or grease & flour a 10" loaf pan. Set aside.
In a small bowl combine flour, baking soda, baking powder and salt and combine with a pastry cutter or fork. Set aside.
In a large mixing bowl, add egg, sugar, melted butter, bananas and vanilla, and mix until well combined and smooth.
Add dry ingredients to wet ingredients and mix to combine.
Stir in zucchini and chips, if you want them in your bread.
Using a large spoon scoop or pour batter into prepared bread pan and spread evenly. Top with chocolate chips if using.
Bake for 45 - 50 minutes, or until wooden pick inserted into center comes out clean. Pro Tip: check at 35 - 40 minutes and if top is starting to brown, cover loosely with foil and continue baking until center done.
Let rest in the baking pan for 10-15 minutes. Then remove from pan and cool completely before slicing. Enjoy!

Very moist and delicious, but a little bland. Would definitely make it again but would add 1 tbsp. cinnamon.
