Recipe from From Milk to Meat, they are the perfect make ahead breakfast, snack or dessert. We made the granola cups ahead of time and filled them whenever we were ready to eat. The granola cups stay well in the fridge for several days so we could literally grab them, fill with our favorite yogurt (I chose almond milk yogurt, my son coconut milk yogurt and my husband Greek yogurt!) and top with whatever berries you like.
The granola cups themselves are made with 6 simple ingredients (gluten-free oats, mashed banana, honey, almond extract, cinnamon and a touch of salt) and are are super easy to make. We made them in both full size and mini muffin tins and both turned out great. And we also tried them with vanilla extract instead of almond extract for a slightly different flavor. So there is a lot of versatility.
While we’ve been enjoying them throughout our busy days, they are really pretty and would also be great served at a party or brunch. No matter when you eat them, I think you’ll love them!
