Homemade Granola Yogurt Parfait

Simple, Customizable and Delish!

This Granola Yogurt Parfait is quick and easy breakfast, snack or dessert.

It’s simple, customizable and delicious!

You can use your favorite yogurt, favorite fruit or berries and even your favorite granola!

But I highly recommend trying our homemade granola if you’ve never made granola before.

Like the parfait, it’s easy, customizable and delicious!

And it makes 6 cups so once you make it, you’ll have it for the week.

Recipe from my sister-in-law, it’s a combination of her favorite recipes and can be easily adapted to your family’s tastes.

The basics are gluten-free oats, 2 types of chopped nuts (we used walnuts & pecans), coconut oil, maple syrup, cinnamon, sea salt and dried fruit (we used cranberries but dried apricots, raisins or any fruit you like would work great!).

A note about oats: Oats are a naturally gluten-free grain but they are contaminated via cross contact with wheat, barley and rye during the growing and processing process. So definitely look for gluten free oats, preferably certified gluten free oats.

But there’s more…. back when my son was first diagnosed with celiac disease, gluten-free oats were mostly grown via a process known as purity protocol. In recent years, gluten-free oats have also been processed through a manufacturing process known as “sorting”. There is much controversy about sorting versus purity protocol oats. Also, some people with celiac don’t tolerate oats so please do what ‘s best for you and your health.

For those interested, we use gluten-free oats from GF Harvest (amazon affiliate link), grown through purity protocol.

Perfect Parfait

A parfait is a perfect easy breakfast, snack or dessert. Entirely customizable and delicious! And once you make homemade granola, you'll be hooked! Easy and so yummy! NOTE: prep time for parfait is 5 minutes.

Ingredients

Gluten-Free Granola

  • 4 cups certified Gluten-Free rolled oats
  • ½ rounded cup chopped walnuts
  • ½ rounded cup chopped pecans or almonds
  • 3-4 tablespoons maple syrup pending how sweet you like it
  • 6 tablespoons coconut oil melted
  • ½ teaspoon cinnamon
  • ¼ teaspoon sea salt
  • 1 cup dried Cranberries or dried fruit of your choice

Parfait

  • Gluten free granola
  • Yogurt of choice
  • Fresh Berries

Instructions

Gluten-Free Granola

  • Preheat over to 325 degrees.
  • In a large bowl, combine rolled oats & chopped nuts.
  • In a glass measuring cup combine melted coconut oil, maple syrup, cinnamon and sea salt. Whisk well with a fork.
  • Drizzle oil/ syrup mixture over the oats, stirring as you go to make sure all the oats are well coated.
  • Spread granola on 2 baking sheets.
  • Bake for approx 20 - 25 minutes until golden brown, stirring once after about 15 minutes.
  • Remove from oven and allow to cool a bit before stirring in dried fruit.
  • Store in air-tight container.

Parfait

  • In a glass layer. yogurt and gluten free granola.
  • Top with fresh berries.
