Truth: I’m not a big fan of peas, but I LOVE this hummus! It’s fresh tasting, perfectly balanced (i.e. no one flavor stands out) and delicious!
Recipe from Cooking Light, it’s just frozen peas, parsley, tahini, olive oil, lemon juice, garlic & salt and it takes mere minutes to make.
It’s been a hit with everyone’s who’s tried it and I’m thinking it might make a another appearance at Easter. Also perfect for Passover as it’s made without chickpeas.
