These gluten-free, Grilled Lemon Pepper Shrimp have become a staple protein in our dinner rotation.

They are super simple! They come together quickly and the marinade is made with basic ingredients you probably have in your house.

All you need is:

peeled and cleaned shrimp

extra virgin olive oil

fresh lemon

garlic

pepper

salt

The recipe is short on ingredients but big on flavor!

In fact, it may not look like a lot of marinade but a little goes a long way. You are really just accentuating shrimp.

The flavor will be fabulously lemony, a little garlicky, peppery, salty and so tasty!

All you do is mix the marinade ingredients together and add the shrimp and using your hands or spoon, mix to coat all the shrimp.

Cover with plastic wrap and let sit for 15-20 minutes.

Then add the marinated shrimp to skewers by skewering the shrimp lengthwise.

Pro Tip: if using wooden skewers, run under cold water immediately before adding shrimp to skewers.

  • Place on grill, cover and cook for 4 minutes.
  • Using grilling gloves or tons, flip, cook another 3 minutes.

Grilled Lemon Pepper Shrimp Skewers

Ingredients

  • 1 pound shrimp, de-veined, shelled and tail on or off (approximately 14-18 depending on size)

Lemon Pepper Marinade

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1-2 cloves garlic, minced
  • ½ teaspoon pepper
  • teaspoons salt

Instructions

  • In a medium bowl, mix all marinade ingredients together with a spoon. Add shrimp and with hands or spoon mix to coat evenly. Cover with saran wrap and let sit for 20-30 minutes.
  • Preheat grill to 350 degrees F
  • Immediately before adding shrimp to skewers, run cold water over the skewers if using wooden skewers.
  • Skewer the shrimp by placing the skewer lengthwise through the body of the shrimp.
  • Add shrimp skewers to the grill, cover and cook 4 minutes. Using grilling gloves or tongs turn the shrimp over, cook an additional 3 minutes.
  • Serve and enjoy!
