Based on a recipe from Cooking Light, I didn’t use cumin to season the grilled shrimp as the boys were eating most of it and preferred it without, and I don’t use the yogurt in the avocado topping.
We also used Mission brand yellow corn tortillas.
Gotta love a Tostada! These Grilled Shrimp Tostadas with Black Bean Salsa, Avocado and Lime were the quickest, easiest, most versatile dinner!
By versatile I mean some of us piled on the beans and veggies while others ate mostly shrimp…but that’s the best kind of family meal… one where everyone can find something they like.
