How to Make Gluten-Free Homemade Peppermint Patties

They require only 5 ingredients and are super easy to make!

You will need:

sweetened condensed milk

confectioners’ sugar (also known as powdered sugar)

peppermint extract

dark chocolate chips (semi-sweet work well too)

coconut oil

Step by Step How to Make Gluten-Free Homemade Peppermint Patties

They come together in 3 simple steps:

  1. Make the peppermint filling: using a stand or hand mixer, simply mix the confectioner’s sugar, sweetened condensed milk, and peppermint until it forms a stiff dough.
  2. Roll out dough and cut out out peppermint patties using a 1 1/2 – 2 inch cookie cutter, and chill the peppermint patties.
  3. Melt chocolate and dip chilled peppermint patties in chocolate.

Tips on rolling out the peppermint patties:

The dough will be very stiff but not sticky, and it may even appear dry when mixing… but just keep mixing until it comes together (at least mostly — if there are a few extra bits that don’t mix in, you can add them when you place the dough on the pastry mat).

Be sure to generously dust the pastry mat with confectioners sugar and lightly dust the top of the dough before rolling, otherwise the peppermint dough may stick to the mat.

If the dough is sticking to the mat, gently lift it up and re-form a disc, dust the mat again with more confectioners sugar, and start again.

Feel free to use 1 1/2 – 2 inch circle or heart shaped cookie cutters. Both work well!

And yes, this stiff dough will have an unbelievable melt in your mouth texture!

Tips on getting the perfect Chocolate Coating

The most important tip has nothing to do with the chocolate… Do not skip chilling the peppermint patties before dipping in chocolate. The chocolate will melt the peppermint patties if they are not chilled.  You can leave them in the refrigerator for 30 minutes to an hour depending on your refrigerator, or freeze for 30 minutes

When the peppermints are chilled, melt chocolate with coconut oil, preferably using a double boiler 

As an aside, we love our double boiler! It is the best way to melt chocolate in our opinion, as the chocolate stays smooth and does not seize. If you have the kitchen space to store it, it is worth it, especially if you make a lot of recipes calling for melting chocolate.

When the chocolate is melted, use a fork to dip the chilled peppermint patty fully into the chocolate, let any excess drip off and return to the baking sheet lined with parchment paper.

If you decide to decorate with sprinkles, place the sprinkles on after the chocolate has started to set but it still warm so that they sprinkles stick. I recommend letting the chocolate set in the refrigerator for 10 minutes, then adding sprinkles.

As you can see above, we made these in a heart shape for Valentine’s Day.

But as traditional peppermint patties are circles, I wanted to show you that circles are great too! Here we used 1 1/2 inch and 2 inch circle cutters.  Both work, though I preferred the small ones because I thought they held their shape well and were the perfect sized sweet treat!

And while we decorated with red, white and pink sprinkles for Valentine’s Day, you can decorate with any color sprinkles for any holiday or any occasion!

Ingredients

  • 3 cups confectioners or powdered sugar do not "pack" the sugar
  • 1/2 cup sweetened condensed milk use sweetened condensed coconut milk to make dairy-free
  • 1 1/4 teaspoon peppermint extract
  • 1 1/2 cups dark chocolate or semi-sweet chocolate chips, dairy-free optional we've used both Guittard dairy-free extra semi sweet chips (55% cacao) and Guittard dairy-free extra dark chocolate chips (63% cacao)
  • 1 tablespoon coconut oil

Instructions

Make the peppermint center

  • Line a baking sheet or half baking sheet with parchment paper and set aside.
  • In a large mixing bowl, add the confectioners sugar, sweetened condensed milk, and peppermint extract, and mix to combine, until it forms a stiff dough. The dough will be very stiff but not sticky.
  • Generously dust the pastry mat with confectioners sugar and place the peppermint dough (and any extra dough bits if it didn't all combine into one in the mixer) onto the mat and form it into a disc with your hands.
    Dust with some confectioners sugar and using a rolling pin, roll dough about 1/4 inch thick.
    Tip: the dough should roll easily, you may need extra confectioners sugar to make sure it is not sticking to the rolling pin or mat. If it is sticking to the mat, gently lift it off the mat, and start over with more powdered sugar dusted on the mat.
  • Cut out rounds or hearts, using a 1 1 /2 to 2 inch cookie cutter and place on the prepared baking sheet. Freezer for 30 minutes or refrigerate for an hour. It is important not to skip this step as the peppermint dough needs to be chilled or it will melt when dipping in chocolate.

Dip in Chocolate

  • When peppermints are chilled, melt the chocolate and coconut oil together, using a double boiler ideally as it melts the chocolate evenly and keeps it warm and smooth.
  • Dip the chilled peppermints in the melted chocolate using fork, make sure they are fully coated and let any excess drip off. Place back on the parchment lined baking sheet.
  • Chill for an hour in the refrigerator. If topping with sprinkles, chill for 10-15 minutes, then add the sprinkles and return to the refrigerator to keep chilling.

Storing

  • Store in a sealed container in the refrigerator for 1-2 weeks or in the freezer for 3 months. Enjoy!
