When last night’s leftovers become today’s dinner salad. A previous night’s dinner included these amaaazing Mexican Vegan Falafel Bites. The next evening, paired with our Black Bean Veggie Salad and avocado on a bed of lettuce, this turned into leftovers at its finest!
The Falafel Bites were easy to make and were both gluten-free and nearly grain-free, with just 2 tbsp of GF Jules gluten-free flour. The base is a broccoli and cauliflower “rice.” Some recipes use egg to bind these together – these didn’t, and I was pleasantly surprised how well they held up!
