Mint Chocolate Chip Smoothie

A healthier but still super tasty Mint Chocolate Chip Smoothie!

New! I’ve added a high protein option to the recipe that also makes the smoothie a bit thicker and creamier!

We are on a real smoothie kick here, and between the Spring-like weather we’re enjoying in Connecticut right now and loving all things green with St. Patrick’s Day coming up, I couldn’t resist making this New Mint Chocolate Chip Smoothie!

It’s minty, chocolate-y and tastes like dessert but is packed with goodness!

This has become a new favorite snack any time of day!

And it’s super simple to make.

All you need is 7 ingredients:

Ice

Frozen banana

Coconut milk

Fresh baby spinach

Fresh mint

Mint extract and

Chocolate Chips (we used Enjoy Life Foods mini chocolate chips – amazing afiiliate link))

Vanilla Protein Powder (not in photo)

Greek Yogurt (optional, not in photo)

Just a quick note about the bananas…. you may have noticed the recipe calls for frozen bananas.

I tend to peel bananas and keep them in the freezer for smoothies. They give great texture when blended once frozen.

From past experience freezing bananas, I prefer to freeze them before they get brown and find that they are best if used within a few weeks of freezing them.

And a note about mint…

I use fresh mint leaves and just a dash of mint extract.  The mint extract gives the extra punch of mint flavor I was looking for. But you could always skip it and add more fresh mint leave.

So let’s make it!

All you do is put all the ingredients except the chocolate chips in your blender.

And blend it!

The more you pulse it, the more the chips will be broken down and combined into the smoothie.

The color may shift depending how much you blend in the chips.

Top with additional chips and enjoy!

It’s creamy, refreshing, secretly nourishing and so delicious!

Ingredients

  • 1 cup ice
  • 1 small frozen banana (room temperature works fine, the smoothie just isn't as thick)
  • 1 cup coconut milk (or milk of choice)*
  • 1 1/2 cup packed spinach or kale
  • 1/4 cup fresh mint leaves
  • 1/8 teaspoon mint extract
  • 1 tablespoon chocolate chips plus more for topping as desired (sometimes we only put chips or cacao nibs on top and it's still great!)
  • 1 scoop vanilla protein powder I love Livwell Plant Protein Vanilla (not an affiliate link) in this smoothie
  • ½ cup plain Greek yogurt, optional * *if adding Greek yogurt, use only 1/2 cup liquid

Optional Add Ins for extra nutrients

  • 1 tablespoon hemp seeds
  • 1 tablespoon flax seed meals
  • 1 teaspoon chia seeds

Instructions

  • Place all ingredients in a blender according to your blender's instructions.
  • Blend until smooth.
  • Enjoy!
