So these gluten-free No Bake Brownie Bites seemed like a natural recipe to make!
They are super rich and chocolatey but packed with goodness!
And they take just 10-15 minutes to prep so couldn’t be easier to have a healthy chocolate snack at the ready!

So let’s make them!
All you need is:
pecans
walnuts
dates
cocoa powder
hemp seeds
sea salt
mini chocolate chips for rolling
almond butter or nut/ seed butter of choice — optional & not shown in photo below
And they couldn’t be simpler or quicker to make!
All you need is a Cuisanart food processor (Amazon affiliate link) and 10-15 minutes!
First you pulse the pecans and walnuts together until very well chopped.
Then add in the dates and pulse until well combined with the nuts and almost paste-like.
If you are adding in almond butter, you’d add it in now.
How will you decide if you want to use almond butter?
These gluten-free No Bake Brownie Bites are super chocolatey and rich… I find the almond butter cuts the richness a bit… so play around and see which you prefer.
Next add in the cocoa power, hemp seeds and sea salt and pulse until well combined into a chocolately “dough”
The “dough” will be smooth, chocolatey and will be able to be rolled into balls easily.
Now all you do is roll them into balls and roll in a few chocolate chips.
As for the chocolate chips, I found that I prefer them only on the outside of these bites so I like to roll just a few in my hand for each brownie bite…. but feel free to play around and leave some without chocolate chips or add even more if you love chocolate!
And the texture is amazing — soft & fudgy but with a little crunch from the chocolate chips!
They can be enjoyed immediately and hold their shape well, but I still like to refrigerate them for an hour on a baking sheet or so before storing them in a container.
Then they can be eaten straight out of the fridge!
Two more pro tips:
1. While I usually store energy bites in the freezer, I prefer to store these in the refrigerator. I like the texture better. They stay well for 1-2 weeks.
2. If you’re unsure about eating all of them in that time frame, you could cut the recipe in 1/2.

Ingredients
1cuppecans
1cupwalnuts
1cuppitted dates
1-2tablespoonsalmond butter or nut/seed butter of choice (Optional)(adding almond butter cuts the richness of these chocolatey treats and makes bites a little creamier)
4tablespoonscocoa powder(for less chocolaty use 3 tablespoons)
1/2teaspoonsea salt
2tablespoonshemp seeds
1 tablespoonchia seeds (optional)(chia seeds add extra nutrients and crunch)
1/4- 1/2cupmini chocolate chips for rollingoptional but recommended
Instructions
Place pecans and walnuts in a food processor and pulse until very finely chopped.
Add in dates and pulse until well combined and paste-like.
If using almond butter, add in now and pulse till combined.
Add hemp seeds, cocoa powder and sea salt and pulse until well combined into a smooth chocolatey dough.
Roll into balls (about 1 - 1 1/2 inch diameter). If using chocolate chips, place a few chocolate chips in your hand and roll each ball with chocolate chips. To be more exact in placement, gently press the chocolate chips into the outside of each brownie bite.
Place on a plate or baking sheet and store in the refrigerator for an hour or so before storing in a sealed container. Stay well in the refrigerator for 1-2 weeks.
