These gluten-free No Bake Bites are a healthier treat anytime of year but especially around Halloween! Decadent-tasting and yummy but packed with goodness! They come together in One Bowl, in just 15 minutes, and can be enjoyed immediately or later for an easy, fun, nourishing snack or dessert!
The raisins and pumpkin seeds are optional but they add in extra flavor, texture and nutrients.
Plus they remind me of gorp– where are my hikers?
One final note, one of my taste testers was skeptical of the pumpkin seeds but loved them! So you could always give it a try in one and see what you think…
Pro tip on natural peanut butter— You are certainly welcome to use any peanut butter you love but we happen to love natural peanut butter.
The only thing about it that I don’t love, is that it often separates while it sits on the store shelves, leaving a layer of oil on top. When this happens, I pour off part of the oil and mix well.
If you leave too much oil in, the bites might not hold their form as well, but if that happens just add in some extra oats of coconut and it will be fine!
They come together in One Bowl and 15 minutes!
It’s just 3 simple steps:
Mix together peanut butter, gluten-free oats, coconut, vanilla extract and maple syrup
Add in and mix to combine chocolate chips, chocolate covered candies and raisins and pumpkin seeds if using
Form in to balls and enjoy!
The mix will hold its form well and be formed into balls immediately.
I usually roll into balls about 1 1/4 inch to 1 1/2 inch in diameter.
And I tend to store them in the refrigerator since they hold their form so well!
They stay in well in the refrigerator for 1-2 weeks, if they last that long!

Ingredients
1 16ozjar natural peanut butterI pour off some of the oil on top and mix well! (Substitute any nut or seed butter you love)
1cupgluten-free rolled oatswe like GF Harvest, affiliate link
1/4cupmini chocolate chipswe used Enjoy Life Mini Chips
1/2cupchocolate covered candieswe used plain M&Ms
Optional:
1/4cupraisins
¼cuppumpkin seeds
Instructions
In a large bowl, mix together peanut butter, gluten-free oats, maple syrup, vanilla extract and coconut. Mix by hand using a large spoon until well combined.
Add in chocolate chips, chocolate candies, raisins and pumpkin seeds if using and mix to combine.
Roll mixture into balls of any size (I usually go with 1¼ to 1½ inch diameter).
Enjoy immediately or store in refrigerator (for 1-2 weeks) or freezer (up to 3 months).
Yummy! I made these this morning for an after school, before volleyball snack for our daughter. We all love them! I put the pumpkin seeds in but left out the raisins. There’s just the right amount of chocolate too! We’ll be making these again!
