How are they different from our Spinach Pie Bites

We adore our Spinach Pie Bites! We have been making them since my son was first diagnosed with celiac disease many years ago.  They taste like the filling of a spinach pie!

There are several differences between these two bites:

  • Spinach Pies Bites have more ingredients including onions, parsley, feta and many more eggs.
  • Spinach Pie Bites take longer to prepare (and are worth every minute!)
  • Both are great appetizers but Spinach Pie Bites can also be more of a meal as they are a bit heartier.

How to Make Gluten-Free Parmesan Spinach Bites

These savory bites are one of the easiest warm appetizers ever!

The recipe is from my mother. I so fondly remember helping her make them and loving them! The original recipe has been both cut in half because it made a lot (!) and adapted to be gluten-free.

You will need the following ingredients:

sesame seeds

frozen chopped spinach

gluten-free Italian breadcrumbs (we used Aleia’s)

Parmesan cheese

eggs

butter (just a small little!)

nutmeg

salt

pepper

Step by Step How to Make Gluten-Free Parmesan Spinach Bites

These savory bites come together in no time and in just 2 steps:

1. First toast the sesame seeds. This takes just 2-3 minutes and give them a nice golden color and great flavor.

2. Put all the remaining ingredients in a large bowl and mix until very well combined. I used a stand mixer but you could use a hand mixer or even mix by hand.

Then all you do is roll them into balls about a tablespoon in size and roll each ball in toasted sesame seeds.

And bake for just 10 minutes!

Make ahead/ Storage

We love that they are so quick and easy to make!

It makes them perfect for whipping up last minutes.

But they can also be made ahead, frozen before baking then popped into the oven when ready to serve!

The key is to freeze them in a single layer on a baking sheet, then store in a sealed container.

Having a batch at the ready in the freezer makes them so versatile and perfect for easy snacking or a quick appetizer.

Ingredients

  • 1/4 cup sesame seeds
  • 1 10 oz package frozen chopped spinach, thawed, water squeezed out
  • scant 1 cup gluten-free Italian breadcrumbs we use Aleia's gluten-free Italian breadcrumbs
  • 2 large eggs, lightly whisked
  • 1/2 cup Parmesan cheese
  • 2 tablespoons butter or dairy-free butter, room temperature
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon ground nutmeg

Instructions

  • if baking immediately, preheat oven to 350 degrees. Either way, line a baking sheet with parchment paper if using. Set aside.
  • Toast sesame seeds: in a medium skillet over medium heat, add sesame seeds and cook for 2-3 minutes, stirring constantly until seeds are golden. Set aside in a small bowl (you will roll the spinach bites in this bowl).
  • In a large mixing bowl, add all remaining ingredients -- thawed & drained spinach, whisked eggs, breadcrumbs, Parmesan, butter, salt, pepper and nutmeg, and mix until very well combined -- you want a mixture that you can form into balls.
  • Using your hands, shape mixture into approximately 20 tablespoon-size balls and roll in the toasted sesame seeds. Place on prepared baking sheet.
  • Bake 10 minutes or until just firm. Serve and enjoy!
  • Make ahead: can be made ahead and stored in the refrigerator for up to 24 hours or freeze on a baking sheet in a single layer, then transfer to air tight container and take out as needed, and bake 10-15 minutes, enjoy!
