I had a crazy busy day with the boys finishing up school this week and on Finals schedules + lot of appointments, so I needed a lunch that was going to fuel me though the day!
Kept it simple with kale straight from my garden, leftover black bean veggie dip, quinoa, plantain chips for crunch and of course avocado!
