Just mix together the dry ingredients — gluten-free rolled oats, chia seeds, pumpkin spice, cinnamon and coconut.
Then add in pumpkin, maple syrup and almond butter.
Next add the chocolate chips and mix until just combined. That’s it!
And I want to point out, you can either mix these gluten-free pumpkin chocolate chip energy bites together by hand or use a mixer. If you’ve followed me a while you know I do everything in my Kitchen Aid Mixer (Amazon affiliate link).
Then all you do it roll the mix into balls. You’ll get 12-14 balls depending on the size. These are approximately 1 1/2 inch balls.

These pumpkin energy bites are the absolute best! So many great ingredients and also so easy to make. I found it was the easiest to make them in a mixer, but I was able to make them in about 10 minutes and they were absolutely delicious. They had the perfect balance of pumpkin, spices, and just the right amount of sweetness. Such a great quick and small afternoon snack option or to satisfy my sweet tooth when I am craving something small and sweet!
