We have been looooving these Gluten-Free Pumpkin Chocolate Chip Energy Bites the past week and can’t wait for you to try them!

They are packed with goodness and a taste of Fall (pumpkin spice anyone?) in every bite!

With just 9 ingredients and no baking (and no food processor!) required, they come together in 10 – 15 minutes!

And the texture is amazing! They can be enjoyed immediately and eaten straight out of the fridge or freezer, your choice.

So let’s make them!

All you need…

chia seeds

gluten-free rolled oats

pumpkin spice

cinnamon

unsweetened shredded coconut (we used Let’s Do It Organic Shredded Coconut brand, Amazon affiliate link)

canned pure pumpkin puree

maple syrup

chocolate chips (we used Enjoy Life Mini Chips, Amazon affiliate link)

almond butter (we used Barney Butter Smooth Almond Butter, Amazon affiliate link) (you can substitute your favorite nut or seed butter)

A note about oats: Oats are a naturally gluten-free grain but they are contaminated via cross contact with wheat, barley and rye during the growing and processing process.  So definitely look for gluten free oats, preferably certified gluten free oats.

But there’s more.… back when my son was first diagnosed with celiac disease, gluten-free oats were mostly grown via a process known as purity protocol.  In recent years, gluten-free oats have also been processed through a manufacturing process known as “sorting”.  There is much controversy about sorting versus purity protocol oats.  And some oats that were thought to be “safe” were recently tested to show gluten… For more information I’m linking to articles by Gluten-Free Watchdog from January 2023 and April 2023.

Also, some people with celiac don’t tolerate oats so please do what ‘s best for you and your health.

How to Make the Pumpkin Chocolate Chip Energy Bites

They literally come together in 10-15 minutes.

Just mix together the dry ingredients — gluten-free rolled oats, chia seeds, pumpkin spice, cinnamon and coconut.

Then add in pumpkin, maple syrup and almond butter.

Next add the chocolate chips and mix until just combined. That’s it!

And I want to point out, you can either mix these gluten-free pumpkin chocolate chip energy bites together by hand or use a mixer. If you’ve followed me a while you know I do everything in my Kitchen Aid Mixer (Amazon affiliate link).

Then all you do it roll the mix into balls. You’ll get 12-14 balls depending on the size. These are approximately 1 1/2 inch balls.

And best part?

Just like our Almond Butter Chocolate Chip Energy Bites, they have an amazing texture!

You can enjoy them immediately or chill them in the refrigerator or freezer. Any way, they are sooooo yummy!

Pumpkin Chocolate Chip Energy Bites

These energy bites are packed with goodness and a taste of Fall (pumpkin spice anyone?) in every bite! And they happen to be Gluten-Free, Vegan and No Bake (and no food processor!), coming together in just 10-15 minutes! A perfect snack anytime! Store in refrigerator or freezer.

Ingredients

  • 1 tablespoon chia seeds
  • 1 1/2 teaspoons pumpkin spice
  • 1/2 teaspoon cinnamon
  • 1 1/14 cup + 2 tablespoons gluten-free rolled oats
  • 1/2 cup unsweentend shredded coconut
  • 1/4 cup + 1 tablespoon canned pure pumpkin puree
  • 1/4 cup maple syrup
  • 1/2 cup almond butter or your favorite nut or seed butter
  • 1/3 cup mini chips or substitute raisins

Instructions

  • In a large mixing bowl, combine chia seeds, pumpkin spice, cinnamon, rolled oats and coconut. (you can use a mix or mix by hand).
  • Add almond butter, pumpkin and maple syrup to the dry ingredients and mix to combine (mixer or by hand)
  • Add in chips and mix till just combined.
  • Roll mix into approximately 1 1/2 inch balls,. You'll get 12-14 balls depending on size.
  • Store in refrigerator for 4-5 days or freezer for several months.
  • Enjoy!

    These pumpkin energy bites are the absolute best! So many great ingredients and also so easy to make. I found it was the easiest to make them in a mixer, but I was able to make them in about 10 minutes and they were absolutely delicious. They had the perfect balance of pumpkin, spices, and just the right amount of sweetness. Such a great quick and small afternoon snack option or to satisfy my sweet tooth when I am craving something small and sweet! I love eating these energy balls with some plain yogurt and a banana in the morning as well! Thank you so much for the recepie! Looking forward to seeing more energy bite recepies in the future! Would love to see a Christmas energy bite (e.g., gingerbread) recepie!

    These are great! I add one scoop vanilla chai protein powder and skip the chocolate chips. 5gr of protein and 154 cals if you yield 12
