Roasted Baby Beets & Blood Orange Salad

A mix of savory, sweet and tangy!

Can’t BEET this salad! Roasted Baby Beets and Blood Orange Salad with Blue Cheese and Walnuts.

I tried this salad as part of my Peter Rabbit’s Picks to try and share new Spring recipes ideas for Easter, Passover or any time, and THIS is a winner!

Recipe adapted from Cooking Light, the flavors all work so well together. Savory beets paired with the sweet and unique flavor of blood oranges, the crunch of the walnuts and tang of the blue cheese is incredible.  It’s also tossed in a yummy orange-balsamic vinaigrette with orange zest the completes it.

If you’re dairy-free or vegan, you can skip the blue cheese. I don’t personally eat a lot of dairy but felt that with this salad the blue cheese really finishes the salad both visually and flavor-wise.

This salad is definitely making an appearance on my Easter table!

Roasted Baby Beets & Blood Orange Salad

I adjusted the dressing to have a bit more zing! Here are the measurements I used:
  • 2 tsp orange zest
  • 5 tbsp fresh orange juice (from the blood oranges)
  • 2 tbsp balsamic vinegar
  • 4 tsp EVOO
  • 1 & ¾ tsp Dijon mustard
  • ¼ tsp salt
  • ⅛ tsp black pepper
  1. Mix ingredients together and drizzle over salad
