These Roasted Cauliflower & Chickpea Tacos are the perfect weekday dinner… super easy to make, nourishing, delicious and satisfying.

Recipe from Two Peas & Their Pod, the only cooking involved is to literally toss the cauliflower and chickpeas with lots of spices (chili powder, cumin, garlic powder, onion powder, sea salt), some fresh lime juice & olive oil and roast them on the same pan for 30 minutes.

Topped with diced avocado, chopped red cabbage, jalapeño and lime crema made with Kite Hill Greek Yogurt, they are high in flavor, the perfect amount of spicy — and so good!

  1. You know when you come across something so amazing that you can’t wipe the smile off your face? Well, this recipe did this to me. I was happy and extremely satisfied all night. Even my meat loving husband gave his seal of approval. The seasoning mixture on the roasted veggies gave so much depth to the meal. Not to mention the lime crema sauce took the tacos to a whole other level! It was absolutely D E L I C I O U S. I can’t wait to make them again.
