It’s the type of salad that works as a side salad with just about everything — serve it with dinner, brunch or as part of lunch with other veggies, proteins or even avocado toast!
It pairs with everything and finishes the meal!
And it’s easy to prepare!
All you need is:
lettuce of choice (I used a Spring mix here)
shredded parmesan cheese
unsalted pepitas ( or pumpkin seeds)
5 ingredient Lemon Honey Dressing
And the Lemon Honey Dressing couldn’t be easier!
All you need is:
lemon juice
extra virgin olive oil
honey
shallots
salt & pepper
I give a range of olive oil quantity to so that you can adjust to taste and make more or less lemony
And you just whisk all the ingredients together!
The dressing makes just over 1/2 a cup so it works for a large salad or for meal prep.
I often make a batch and then add it to a side salad for lunch for several days.
And to serve the salad, all you do it literally toss it all in a bowl and mix together!
Super simple and so delicious!

Lemon Honey Dressing
1/4cuplemon juice
2-4tablespoonsExtra Virgin Olive OilI tend to go with 3 most often but give a range so you an adjust to taste
2teaspoonshoney
1shallotminced
salt and pepper to taste
Instructions
Lemon Honey Dressing
Add all ingredients into a liquid measuring cup or small bowl and whisk until well combined
Salad
Place lettuce in a large bowl and toss with dressing to taste, top with shredded parmesan and pepitas. Enjoy!
